What is tapa in Filipino cuisine? Usually a preserved (dried) meat (or fish) process. It’s evolved over time. This is a simple recipe with an amazing taste. In our area it’s a traditional Filipino food you might find served at a wedding along with many other Filipino dishes. My good neighbor Roselyn brought over a large dish and shared her recipe. It was a hit! Can be eaten warm or room temperature but we’ve been known to pull it right out of the refrig for a taste treat. Roselyn used pork here but sirloin can be used too.

Chicken Sotanghon Soup

If you’re not feeling well… And you live on my block you might be surprised with a fresh bowl of chicken soup, filipino style. Thank you Roselyn! It was just what I needed for my upset stomach. But you don’t need to be under the weather to appreciate this delicious soup. If you’re into cellophane noodles, chicken and ginger this is the soup for you. And of course a side of white rice is mandatory. 😉 I like it right on top!

Spinach Salad Filipino Style

Not sure how or why but a friend and I got to talking about food. Ha. While eating and drinking last night Roselyn mentioned a salad (& the recipe) she frequently ate as a child. It sounded so simple and good I had to try it. She was absolutely right about this side salad! It’s delicious. Don’t tell her but I used pre-washed fresh spinach. She said it wouldn’t be the same without fresh bunches of spinach … not pre-washed. This was pretty darn good, Roselyn! Check out a few of her other recipes she has shared, here and here.

Japanese Eggplant Parmesan

Japanese Eggplant AppetizerThis friend of mine was telling me an easy way to roast Japanese eggplant on an electric stove top element … Followed by a dip in egg and…. She saved me a taste treat. And it was so delicious I couldn’t believe that’s all she did. So, as my son-in-law likes to say, a little R&D was called for. It was simple and successful even with my first attempt … and I added a little breading to my process to give it a bit of an Italian twist. I didn’t go as far as a drizzle of marinara and a sprinkle of Parmesan but could see this as a special addition.

Hope you too try and enjoy this simple but wonderful treat! BTW, if you frequently question whether you wish to try eggplant again because the outcome in the past has been chewy, tough or tasteless this Japanese Eggplant Appetizer will change your thinking.

Filipino Chicken Soup

Doesn’t this look fabulously delish! I wish I had some this very minute. A shy friend of mine made this for my mother. (See her food photo, next page. She advised me that noodles are really not part of this dish.) I say shy because she’d rather remain anonymous. And since she has yet another recipe for me, Filipino Adobo Style Chicken, I must respect her wishes.

Both recipes, the second coming up later today, are amazing and so healthy too.
