Potatoes Au Gratin

One of the meals I had as a kid! We called the potatoes scalloped incorrectly and often used Velveeta Cheese … Yikes! Not always successfully. I have changed a few things here including the cheese. But I haven’t increased the ingredient list … one of the great positives of this recipe. The prep is easy and quick. The potatoes need about 50-60 minutes baking time for the best flavor and texture.

The New York cut pork chops can be pan seared until done or quickly browned and baked for the last 5 minutes on top the potatoes. The baking can lead to dryness if not careful. A no fuss applesauce can be cooked up in 10-15 minutes from two Granny Smith apples and a few tablespoons of water. The perfect meal with few ingredients. Dress it up with spices if you like but I just like the simplicity.

Lots of Family and Food over the last days. It’s been great fun! Thinking of what to do with my few turkey left overs. Decided to try out my new scone baking dish. And going to try adding a little of this and that to my recipe, making a variety. Maybe cranberries, turkey, cheese, Meyer lemon. The lemon tree is full this year. Can’t wait!

Dean Martin certainly created a curiosity about pasta fazool with his song “That’s Amore.” But it wasn’t until I heard a friend’s remark, he was driving around in his corvette when the rest of us were eating pasta fazool, that my curiosity was pushed enough … I needed to know. (Thanks Paulie) Simply put, this is a traditional Italian dish made with, you guessed it, pasta and beans … Originally a peasant soup usually made without meat.

Since those days I’ve tasted many versions of this soup and pretty much love them all. I’ve heard the chain, Olive Garden, has their version as well. So, I jumped on the bandwagon and created my own Pasta Fagioli.

Absolutely Perfect, Thank You! Here’s my brother’s recipe if you haven’t tried this Traditional Portuguese Soup.

We had a wonderful time. Sopas Sunday.

Yes, the comments section is closed but I do receive your comments directly and respond if you have questions. This particular comment (received August 2023) details what many of us as children experienced. Enjoy the nostalgia! BTW, the beans are called tremocos in Portuguese Lupin in English.

“I grew up in the San Joaquin Valley and after church on Sunday we would go to this fiesta. There would always be a long line outside the back of the church going down to the basement, we would watch the parade with all the royalty girls with the beautiful dresses marching up to the church.They got to go down and eat first so we would stand in line and they always had places outside the church while you were waiting to go down where you could buy a soda or a cocktail and these beans (can’t remember the name of them but they had a casing and you’d pop the bean in your mouth and the casing would stay on your finger you threw that part away).Then when it was time to go down and eat you’d pick out a soda or drink for the adults and sit at these long tables with butcher paper on them. After about 15 minutes or so they would bring bowls of pickles then big bowls of stale french bread and then a big bowl of meat with the most amazing smell of spices and meat with lots of juice and cabbage, you’d get a piece of bread and spoon the meat, cabbage and juice onto the bread. It would make the stale bread soggy and yummy. It would just melt in your mouth and when it was all over you would leave offering on your way out if you chose to. My mother who is 84 still makes this for the family every year and it brings back so many wonderful memories. This recipe is the closest to what I remember it tasting like. Thank you for sharing it.”


How To Dress Up Basic Potato Soup

If you know the how to of a basic Potato Soup you have multiplied your soup recipes, well, not infinitely exactly but too numerous to count. So many options … make it creamy and rich or spicy and meaty … mash the potatoes or leave chunks for more texture … add greens and leave off cream … add milk and not cream … add clams or sausage or just go it plain. An economical soup with so much potential.

My brother is here to visit and today is  going to be our first day of real rain in months.  Yes I’m in the California drought area. To celebrate I’m making soup. I know Dan likes Portuguese Soups but he has plans to help his daughter with Sopas tomorrow. Not sure he would appreciate chicken soup. How about a rich Potato Soup! It’s not unlike the base for Boston Clam Chowder and this too is his favorite.
