Actually, it isn’t!

But this recipe is going to include chicken breasts. And, what I’ve done here. This is a 30 minute version of this hunter stew with little fuss.

Curious yet, about what I’ve used? Turkey! But not just turkey, lean ground Italian spiced turkey. I love turkey and sometimes find myself substituting it for chicken if I can. For me this works here but if you’re looking for something close to the actual dish … Not to worry.

Recipe

Serves 4

1 1/2 pounds boneless and skinless chicken breast-thin 1/2 or less inch thick Or cut breast into 1 to 2 inch pieces (For the turkey version-just simply add the turkey in place of the chicken breast. Use 1 1/4 pounds approximately of lean Italian spiced ground turkey)
2 tablespoons olive oil
1 small yellow onion-diced
1 green bell pepper-roughly cut or thinly sliced, your choice
Large carrot-diced small (for sweetness, or add several teaspoons sugar after tasting sauce for need)
1 clove garlic-minced
1/2 Cup dry wine (red or white)
1/2 Cup chicken broth
14-15 Ounce can petite cut tomatoes
8 Ounces tomato sauce
1 Tablespoon parsley or 1 teaspoon of dried
1/2 Teaspoon basil
1/4 Teaspoon thyme
1/4 Teaspoon marjoram
1 Large bay leaf
Salt and pepper to taste
Parmesan for sprinkling
Fresh parsley for garnish

Use about 1 generous tablespoon of olive oil to brown the breast meat (or ground turkey) over medium heat. Do not over-cook. Need not be cooked through. Salt and pepper as you go. Remove from the skillet. Set aside.

Drain fat from skillet and add the last of the oil. Sauté the onion and bell pepper until tender. Then add garlic for the last minute.

Add all the ingredients to the onion/pepper/garlic and bring to a simmer. Add the browned meat and continue smearing for about 20 minutes.

Test for salt, pepper and sugar need. You’re done. Remove the bay leaf.

Serve over cooked pasta, or serve pasta with garlic, olive oil, parmesan cheese sauce on the side.

Garnish with fresh parsley and serve with grated parmesan.
