Cucumber Onion Salad
















Talk about an easy recipe! This oldie was served in the summer months at home, and my grandmother’s. It’s one of those recipes that is so old it’s everyone’s.

I have added sliced tomatoes but some may prefer without. I added lots of pepper but others prefer paprika. Change it up and make it your own!


Serves 4


1 Large flat shaped (sweeter) red onion-sliced thinly and rings separated
2 Large cucumbers-peeled
1 Large beef steak tomato (optional)
1/2 Cup water
1/2 Cup vinegar
1/4 Cup sugar or sugar to taste
Salt and Pepper to taste
Paprika for sprinkling (optional)
Minced basil for sprinkling (optional)

Mix together the vinegar and water. Add the sugar and taste. It should be sweet but the degree of sweetness is up to you.

Slice the tomatoes, onion and cucumbers thinly.

Layer in a shallow dish and smother with the vinegar, water, sugar mixture. Refrigerate up to 24 hours. Or at least several hours before serving. The taste will come alive.

If you like you can serve olive oil at the table to drizzle over your single serving. It is not recommended to mix together the oil and vinegar and add. The oil will break down the tomatoes, onion and cucumbers.
