Green Enchilada Casserole

I apologize. I wasn’t fast enough with the camera. We actually finished this off in one sitting … it was so good.

Mentioned to my daughter about my creation, this Simple Green Enchilada Casserole, with only five ingredients and she said, “Oh yeah, I have that recipe!” You do! I didn’t know it was one!

So, while my daughter was setting up the family room for a little celebration I put this together in about 10 minutes and baked it through in 40. Serve with a Taco Salad. Perfect!

Recipe

Preheat oven to 350 degrees F
Bake for about 40 minutes
Serves 4 Adults

One precooked chicken from your grocer, 1 pound to 1 1/2 pounds for those that enjoy more chicken-debone chicken, remove skin and break into bite size pieces
6 Large flour tortillas-mine fit perfectly, right to the edge in my casserole dish (Individual enchiladas can be made instead if you like)
3 cups shredded combination of Mexican cheeses or a combination of cheddar and Monterey Jack
15 Ounces green (salsa) chile sauce (one of the first ingredients listed will be green chiles) This is located in the salsa section of your supermarket.
15 Ounces green (salsa) tomatillo sauce (one of the first ingredients listed will be tomatillos) This is located in the salsa section of your supermarket.

Mix the two sauces together in a large measuring cup with a spout.

Spray or grease your casserole.

Alternate the ingredients starting with the chicken then cheese, salsa and tortilla. Mentally divide the ingredients into six layers starting with the chicken and ending with the last tortilla, reserving a little cheese and salsa for the top.

Bake uncovered until bubbling, about 40 minutes.

For enchiladas:

Warm the tortilla first in a nonstick skillet (no oil necessary). The warmth will enable you to roll the tortilla without tearing.

Layer the tortilla with chicken and cheese and a tablespoon or two of salsa, along the center. Roll the tortilla and place the seam down in you prepared oblong dish. Pour remaining salsa over the top and bake uncovered until bubbling, about 40 minutes.
