Roasted Eggplant Dip

Roasted Eggplant Dip

Japanese Eggplant are so easy to grow. Two plants can overwhelm me with so much fruit. I had to quickly think of something. I had Roasted, made Ratatouille, and Cooked with Orzo. Even used in my Eggplant Parmesan, prefer the larger variety for this. (The larger variety can be used in this recipe instead, and you may prefer. Just cut one large unpeeled eggplant into one-inch squares.) This is what I came up with! And what a great idea for these hot summer evenings (with wine, of course).

Meatloaf Stuffed Potatoes

Meatloaf Stuffed Potatoes

You either love meatloaf or you hate it. In our family not all are into it. Since it’s one of my favorite comfort foods I’m always trying to disguise meatloaf to make it more palatable for the very few that turn up their noses. This recipe is somewhere between a Shepherd’s Pie and a loaded baked potato. Enjoy this simple variation of meatloaf.

Chai Meltaways

Chia MeltawaysChai Meltaways says it all! Doesn’t that sound like the perfect cookie! It’s worth purchasing chai spice (rather than putting it together yourself) simply because the proportion and combination of spices is done for you & it’s a lot cheaper than purchasing all the spices you need separately. I’ve found King Arthur Flour is pretty reasonable with pricing and I trust their products. This has a 5-star rating. Check it out here. This cookie just has an amazing flavor and texture. I can’t wait to move on to cakes and muffins with this spice combination.

Blue Cheese Burgers

Blue Cheese Burgers

These Burgers are Perfect! Blue Cheese Burgers are our preference for this Fourth! These burgers can be prepared one of two ways … with a creamy blue cheese topping or with the blue cheese mixed right into the ground beef. Both recipes are delicious. The second is a little less time consuming and the first recipe gives a bit more blue cheese taste. You decide. You can’t go wrong!

Zucchini Patties

Zucchini PattiesThis very popular recipe is so easy.  Do you have a favorite meatball recipe? Try substituting grated zucchini for the meat used. That’s pretty much what I have done here … Then simply cooked in a little olive oil. Look at this recipe and see if you don’t want to give it a try.
