Portuguese and Italian Sausage Sliders

No one wants to spend time in the kitchen when the game’s on. Back in the day most women went out on game day … Maybe took in a movie. Shopping was out … stores weren’t open Sundays.

Super Bowl Sunday the television room will be filled with everyone. Even gramma has a fav team. So, let’s make the spread quick and easy. Here are two favorite sliders with one basic recipe.

Recipe

Makes about 16-20 sliders

10 Portuguese sweet rolls or Hawaiian Bread Rolls
10 Crusty slider rolls
1 Pound Italian sausage-mild or spicy-cut into two inch lengths
1 Pound Linguica-mild or hot-cut into two inch lengths
2 Tablespoons of olive oil
2 Green bell peppers or combination of yellow and red- cut lengthwise in strips
1 Large yellow onion-cut lengthwise into strips
1/2 Cup rough cut pitted large olives
1/2 Cup chopped Roma tomatoes-seeds removed

1 Cup marinara sauce-best jarred you can find-served on the side
1 Cup Portuguese Mayonnaise or doctored up jar mayonnaise-served on the side

In a large skillet heat one half the oil over medium heat. Add the onion and sauté until golden brown. Remove and set aside.

Add the additional oil and sauté the bell peppers until tender and slightly browned. Remove and set aside.

Add the Italian sausage to the same skillet, no oil is likely necessary, and cook until done.

Clean the skillet and heat up again to medium heat. Add the Portuguese sausage, no oil needed, and cook through. Simmer in dry red wine until done instead if you like.

Layer the Italian sausage in the crusty roll, add the bell pepper and onion and a sprinkle of tomato. Serve warm or cooled to room temperature marinara on the side.

In the sweet roll place the Portuguese sausage, add the bell pepper and onion and a sprinkle of olives. Serve mayonnaise on the side.
