I received these cheeses in the mail today and plan to try them out in a couple of recipes. I love cheeses of all kinds … limburger-maybe not, sorry grandpa, but then I haven’t smelled that cheese in years. It might be more palatable to me now.

The history of this Asiago Cheese is interesting and know it has been around for hundreds of years. But all Asiago’s are not the same. So here I am, to do a little testing of my own.

    Asiago is probably my #1 favorite cheese! Oh, and I have a new found love for Pepper Jack. Yum!!

      I just finished my first recipe with both fresh and seasoned (aged) asiago cheese. I had never tasted to my knowledge fresh asiago before today. I’m in love. lol It’s mild, creamy and melts in your mouth. What Asiago I have been using (buying locally but not at say Whole Foods or a similar grocery … we haven’t any within 120 miles ’round trip) is domestic not from Italy. I do notice a difference.
