Brazilian Cheese Puffs

Pão de queijo

Just in time for Thanksgiving. Mix up in 20 minutes and eat in another, hot from the oven … A simple foolproof recipe. This small cheese bread is typically eaten as a snack but I say it’s a perfect bread accompaniment for a Thanksgiving meal. It’s mild in flavor, and the cheese is not overwhelming. I suppose you could make them cheesier by using stronger tasting cheeses. And if that’s not enough, you could experiment with herbs or just add some minced garlic. This recipe is pretty authentic and I enjoy the simplicity.

A gluten free recipe … The internal stretchiness and crispy exterior of this little puff come from using tapioca flour. Once the batter is mixed you’ll find it’s quite elastic. Rolling into little balls for baking can be a challenge. (Butter those hands!) All is very characteristic of tapioca flour. Mix the batter by hand or use your electric mixer. Either works perfectly.

Caramel Apple Crostata

Whether called a crostata or galette this is in a word scrumptious! In our family nothing’s like an apple dessert. We all seem to agree about apples anyway! This free form makes a star out of the crust for sure … buttery delicious. For an added treat a little caramel sauce drizzle or maybe you’ll want to stick with ice cream or whipping cream. Or no additional topping at all. Enjoy this rustic imperfection which is a perfectly amazing dessert.

Sour Cream Blueberry Scones

When you have company who isn’t into eggs and bacon, pancakes or waffles and just wants coffee you bake something that goes good with coffee. I’ve done coffee cakes, here and here. But this day I made these amazing scones. A little more moist that the usual scone with just a bit of sour cream tartness. I can always tell with this guest if it’s a success. He sneaks seconds! (Just like a kiddo.) I love it!

Chicken Pot Pie Granny Style

Not my Granny’s! My Granny Martha could can, pickle, and preserve. Cook? Not so much! Orlando has delicious recipes from his Granny and this is one. The crust looks amazingly flaky. Wait until you see a slice of this pie! Orlando and I go way back. We both worked at the same company in Raleigh (actually Morrisville), North Carolina. He was my immediate superior and I’m afraid I gave him headaches. Medical research is beyond demanding. Taking on this job seemed like a good idea at the time. After training I would eventually work out of my home. (Be able to take care of my aging Mother.) Fuzzy slippers and PJs ’till noon … How hard could it be! I was forewarned about the 65% travel time. I just didn’t realize the 65% was in addition to 40 hours of work. Something like that! Mother was on her own and not happy! The Fresno airport had no direct flights to where I was headed. Three connections later I dragged myself into the hospital. Immediately I was on! As I’m typing here … why am I missing this job!! Ha! There were perks! Maybe mostly for my friend Ed who loved baseball. He’d meet up with me in US’s baseball towns and we’d take in a game. Houston, Boston, Raleigh-Durham, etc … Visalia not so much. I’m very proud of my work with this company. Orlando was impressive. He was busy reining in people like me and flying all over the country too.

Hope you enjoy this recipe, and I have more from Orlando! I asked for a picture of Orlando to post. He attached a video of him singing, “All I want for Christmas.” It’s not even July!

Use peas, or asparagus or broccoli florets with the potato, celery, carrots and onion. This is jam packed.

Make your favorite 9″ pie crust or use a store bought (2 crust in a pinch!)

Thank you Orlando and to your Granny too!

Pumpkin Pound Cake

DSC_0015It’s a birthday cake for a special friend! He’s so into “The Surprise Cake.” And Tomato Soup Cake is what he usually gets. This year I’ve been changing up everyone’s birthday cake. My bad! I came across this pound cake recipe, Land O’Lakes, and it just sounded so amazing. Land O’Lakes dairies are pretty prevalent around here, Tulare County. And my special friend’s mother only used Land O’Lakes Butter. Seemed like good reasons to give myself a pass and move forward. It was perfect! He loved the texture and the spicy pumpkin pie taste. And believe it or not it gets more moist with time. Did I say it has lots of butter! Give this Land O’Lakes Pumpkin Pound Cake Recipe a try. My only revision suggestion: Fold in 2/3 cup each raisins and chopped walnuts at the end of mixing. Happy Birthday Friend!

Triple Layer Cookie Bar

Shortbread Brownie Chocolate Chip Bar

triple layer cookie barMotivated by the Brookster. Didn’t even know about The Brookster or Baked until my recent trip to Tribeca. The cookie was amazing. Thought about recreating it, two of my favorite cookies baked together. Weeks went by and I hadn’t made any cookies at all … unusual since I love homemade cookies right from the oven. I began feeling cookie deprived, craving my favorites. Why not bake my three favorites together. Know it will work! And here it is, a three layer cookie bar!

Take a tour of Baked while I put together the Triple Layer Cookie Bar recipe.

Happy Mother’s Day

Happy Mother's DayMother’s Day was much different decades ago. Mainly a greeting card day. I loved the crafts created by my children and have saved almost all to their horror. For my mom I often made cookies because while she always claimed she didn’t like sweets she never refused them especially cookies. Today, I’ll be celebrating with a nice brunch at the VP, one of my favorite local restaurants. My children have made this day a big deal and I’m almost a little embarrassed but I love it! Enjoy some of my Mother’s favorite sweets. And Happy Mother’s Day!
