Oatmeal Bars – with Berries This Time

A new take on an old recipe! I’m such a berry fan! I loaded this bar cookie with my favorites, blackberry, blueberry and raspberry. It works with other fruit choices, and with some tweaking I’ll bet chocolate too! But for now I’m into the berries. This could second as a breakfast bar too!

Recipe

Bake in one 9 inch round baking dish, or 8 inch square
Bake at 350 degree for 30 minutes or until topping is lightly brown

Fruit Filling

16 Ounces of fruit (Berries-blueberry, raspberry, blackberry & strawberry (Use one berry type or combination)
1/2 Cup or a little less of sugar
1/4 Cup water
Pinch of salt or not
Teaspoon of lemon juice or not

Add berries and other ingredients to a sauce pan over medium/low heat.

Stir the mixture to incorporate the ingredients.

Bring to a boil. Then decrease heat and maintain a simmer.

Simmer 10-20 minutes until the mixture thickens and reduces a bit. No stirring needed except to check  thickness.

This needs to be fairly thick. If not sure cook a little longer.

Set aside and let cool to a warm.

Oatmeal Crust

1 Cup all purpose flour
1/2 Teaspoon baking powder
Pinch of salt
1/2 Cup brown sugar
1/2 Cup butter-doesn’t need to be cold hard but does need to be firm, not melty soft
1 Cup uncooked oatmeal-quick variety (I like to substitute a little, 1/4 cup old-fashioned oats for 1/4 cup of the quick, to give more crunch and texture- up to you)

Whisk the first 3 ingredients together in a medium mixing bowl.

Add the remainder of dry ingredients and mix.

Cut the butter into the dry ingredients until a crumble forms evenly throughout.

Spread half the mixture into the bottom of your buttered baking dish and press firmly into place.

Now add all the fruit filling and spread across evenly.

Sprinkle the remainder of the crust mixture over the fruit evenly. Pat gently.

Bake in a preheated oven.
