5 Minute Prep Chicken Thighs

Great high protein meal for those with little time for cooking. Layer this over pasta or rice for a deliciously perfect dinner. This is a recipe caught on TikTok. I had to give it a try. It was introduced as a crockpot recipe ready in 4 hours at high heat. Mine was cooked stove top for greater control over the simmering process. A crockpot while convenient can heat to a constant boil drying the meat to a toughness. If you do try the crockpot for this set to low and cook more slowly. Save those leftovers for additional meals in the week or freeze.

2 Pounds skinless and boneless chicken thighs

2 Tablespoons of olive oil

Salt and pepper to taste

2-4 Cloves of garlic-minced

1 Onion sliced

1/2 Cup balsamic vinaigrette-homemade or something like Primal Kitchen

2 15 Ounce cans of chopped tomatoes preferably Romas for a less sharp taste

1/2 to 1 Teaspoon Italian seasonings

Layer (or sprinkle) the ingredients as listed above in your skillet. Cover and bring to a simmer. Cook for two-three hours on medium heat or lower if needed to avoid a rapid boil.

Serve over steamed rice for a savory treat.
