7UP Cake
If you’re thinking this is just another pound cake you’re in for a surprise. The texture of this cake isn’t grainy or heavy … it’s perfect! Simple recipe with rich results. What more can you ask for in a cake recipe! Add glaze, berries and ice cream for a company presentation this 4th. It will be the biggest bang on Independence Day!
Recipe
Preheat oven to 325 degrees F.
Use a bundt pan that has been well greased and lightly floured.
Recipe is one of Orlando’s Granny’s. Thank you Granny! And no, not all 7UP Pound Cakes are equal. Yep, this is amazing!
1/2 Pound butter (2 cubes)-room temperature
1/2 Cup Crisco
3 Cups sugar
5 Eggs-room temperature
Scant 1/4 teaspoon salt
3 Cups flour-measure after sifting or whisking
2 Teaspoons lemon extract
1 Cup 7UP-room temperature
Cream together Crisco and butter. Add sugar and beat until light and fluffy.
Add one egg at a time to the buttery sugar mixture. Beat after each making batter even more fluffy.
Add the salt, and flour one cup at a time. Incorporate well.
Add lemon extract and 7UP. Beat on low just until mixed through.
Pour batter into prepared bundt pan. (Removing baked cake works well if the pan has been well greased and lightly floured. Sprays work but in my experience not as well.) Bake for about 1 hour. Test if you are not sure with a long thin wooded screwer.
Let cool slightly before removing from pan.
