Chicken Divan Pie

Chicken Divan PieWhat do you do when you have leftover cooked chicken and an overabundance of broccoli? You make this delicious pie. And because it was a pasta Sunday I added egg noodles. Absolutely delicious. We’ll be making this one again soon. Change up the pasta, add turkey or tuna instead of chicken and substitute cottage cheese for ricotta. I guarantee this recipe will work with substitutions. This is a great make ahead meal that can easily be frozen after baking for another day.

Chicken (or Pork) Chipotle Soup

Chicken Chipotle SoupJust in Time for National Soup Day! One of those delicious soups that puts together in less than 15 minutes. The chicken, pork, or shredded beef is precooked for a quicker meal. But the option of adding uncooked chicken is given here too … just add on an additional 15 minutes to complete the cooking process.

Chicken Sausage Ragu

Chicken Sausage Ragu

Hearty! Oh so delicious! Yep, this would even please the guys on Super Bowl Sunday! Chicken and Italian sausage are the stars of this dish … It’s all about the meat. You can try it with boneless skinless chicken if you like but you’ll be missing the depth of flavor. This stew is amazingly simple and just the ticket for the game.

Portuguese White Bean Soup

White Bean SoupAdd a little less broth and you’ll have Portuguese White Beans. Love, love, love this soup. Add greens, spinach, kale, swiss chard or turnip greens for a more complete meal. Chop these pretty fine to speed the cooking. This is just the perfect soup for our rainy days.

If you’re looking for a sweeter (and I mean sweet!) Portuguese White Bean Recipe try this.

Meat or Meatless Lasagna Rolls

Meat or Meatless Lasagna Rolls

Lasagna with a new look. Meat or Meatless, this is perfect! Bake the Lasagna Rolls straight up for an impressive look or seam side down for a sauce drenched variation. There’s just a bit of cooking for the meat filling before baking. This is just one of those dishes I have fun with … often preparing differently each time. Make it your own … fill with your favorites.

Lasagna Rolls

Lasagna Rolls

How can the same ingredients arranged differently give a different taste! But a delicious taste! I call this a neat and tidy lasagna. Servings are pretty obvious with each roll as one. Stuff with a meat filling for your company and vegetarian for yourself. Or make each roll guest specific. That sounds like a lot of work but it isn’t. Yep, I’ll admit a bit messy when preparing. Bake all together in the same dish. OK some vegetarians may not go for that. Put this recipe together with your own pasta sauce and pesto or select the very best pre-made. The rest is just assembling. Recipe coming soon!

Basic White Bread

Basic White BreadThere’s nothing like the smell of baking bread. I have two good reasons for bread making today. It warms up my home and it’s delicious! But I’m also having leftovers, yep, Pasta Fagioli, for dinner and I’m wanting to add something extra to make the leftovers seem new.

Time is needed for the rising process but otherwise this recipe is amazingly simple with few ingredients. You don’t have to be gentle with the dough. Work those arms and shoulders! If your kitchen is cold this time of year … Find your warmest area for the rising. Another trick … cover the bowl of dough (leaving ample room for rising) with multiple towels.
