Blackberry Roly Poly

Old fashioned recipe for sure! It’s a cobbler in a roll-up. Use your favorite biscuit recipe or this Fannie Farmer’s. For me, even with cobbler, I prefer a pie crust. Yep, I’m one of those that can eat pie crust with a bit of cinnamon and sugar. See here.

Enjoy this simple blackberry dessert. Oh, and don’t do as I did. Do remove the previously whipped cream from the refrigerator to warm up a bit for a smoother creamier topper … Presentation is often more than 50% of taste.

Recipe

Preheat over to 400 degrees F.

The Roly Poly can be baked in an extra long bread pan, 4″ by 13 to 16″, an oblong dish, or even on a lipped cookie sheet with a thick baking surface. The latter two will be free form. You can even shape into a ring by bringing the longest ends together.

Whisk together the following:
2 Cups all purpose flour
1 tablespoon sugar
1 Tablespoon + 1 teaspoon baking powder
1/2 Teaspoon salt

Cut 1/2 Cup shortening (crisco) into flour mixture until crumbly.

Add 2/3 cup milk to crumbly mixture and stir until clumps together. It won’t be smooth.

Remove to slightly floured surface and knead for about 30 seconds until smooth. Flour surface more if needed and roll dough into rectangular shape. If using a 16 inch long loaf pan roll dough to this length and about 7 inches  wide. Otherwise roll length to about 13-14 inches.

Place the filling atop the rectangle shape. Dot with the 2 T butter. Roll up the dough like a log along the longest edge toward the longest edge. Do this gently to encase the filling. Place into prepared (with baking spray or greased with butter) baking dish or loaf pan, seam down. Bake 40-50 minutes until toothpick or wooden skewer comes out clean (no dough, may have berry stain) when pierced into center.

Cool slightly before cutting and serving. Serve with sweetened whipped cream.

Filling:

6 Cups of blackberries, or mixture of blackberries, blueberries, raspberries (Using equal amounts of each is recommended but if you have more of one than the other … this works.)
1 Cup sugar
2 Tablespoons of cornstarch
1/8 Teaspoon salt
1/4 Teaspoon cinnamon
1 Tablespoon lemon juice
2 Tablespoons butter (optional)

Whisk together dry ingredients. Place all into a bowl except butter and toss lightly. Recipe ready.
