Pumpkin Panettone

This is straight from my test kitchen. Ha! This is an amazingly simple recipe. A little time consuming but worth it. The texture is unchanged from the traditional panettone. The question is why. Why mess with the traditional panettone? It’s simple. Not everyone in our family is into candied fruit. And without the candied fruit where do you go? Pumpkin and toasted or candied pecans. You can add raisins or chopped dates if you must. It’s just a great change up for panettone.

I recommend a paper mold for baking. Baking time is a little faster using a paper mold, and clean up is a snap. This 2 pound loaf paper mold needs no greasing nor extra baking pan.

Hummingbird Quick Bread

Sometimes you just want a fully loaded quick bread. If you love the cake you’re gonna love this! A mere 15 minutes to the oven. Yep, it does take an hour to bake but your kitchen will smell amazing while it bakes. I opt for light olive oil just because of the health benefits. There is reportedly more health benefits to extra virgin. I have used extra virgin without significant taste difference. But if you are baking this for a foodie with a very discriminating palate opt for the light.

Chocolate Malted Milk Scones

The perfect scone for the chocolate lover.

Just the right amount of chocolate taste with a hint of malted. A great way to start your morning with that cup of coffee. This recipe is only slightly revised and one of many put out by King Arthur Baking. I’ve enjoyed many of their products and tried several of their recipes. Baked Strawberry Shortcake

Everyone loves strawberries … well almost everyone! This is the time of year fresh strawberries are plentiful. This recipe is packed with strawberries. Would you believe two pounds! Time for strawberries, shortcake and whipped cream topping.

This recipe is not difficult and there is wiggle room for imperfections. Delicious? I should say so! And what is amazing … this Baked Strawberry Shortcake is not cake like nor is it soggy like strawberry shortcake can be. It is meant to be eaten warm from the oven, and works well served at room temperature. Leftovers are not likely but refrigerate any you may have and eat the next day … cold. There you have it, warm, room temperature or cold … It works!

Cornbread Salad

Just a great change-up salad! Goes great with jambalaya, gumbo, chili beans, pot roast and all by itself!

First, make your favorite cornbread. I prefer from scratch with a less sweet version. Mixes tend to be sweeter and more cake like. Cornbread is an easy quick bread. Try this recipe, here. For a fewer ingredient recipe try this.

Boston Brown Bread

Amazingly simple! Deliciously rich! Quick mix with a somewhat lengthy bake. So worth it! For the recipe ingredients I received a little help from Fannie Farmer. Yep, I grew up on canned brown bread … so, no family recipe. Homemade is so much better! Add a medley of seedless raisins or no raisins at all. It’s delicious.

Caramel Banana Walnut Muffins

King Arthur Baking Products are high on my list. Nope, this isn’t a paid advertisement! I receive their free catalog routinely, and it’s one catalog I actually look through. Great recipes are included along with product suggestions. Their recipes are not included without their trial run. (Neither are my recipes, BTW.) Yep, you guessed it! This is one of theirs. I had all the ingredients (*well not white whole wheat flour) and we were hungry for muffins now. These didn’t disappoint!

*Just a word about whole wheat flour vs white whole wheat flour. As I mentioned this recipe calls for white whole white flour. I used whole wheat flour instead. White whole wheat flour is not simply bleached whole wheat. It’s actually a different wheat which leads to a less dense baked product. While my muffins were perfect I can’t say they might have been better if I had used white whole wheat flour instead.

Portuguese Rolls (Pops)

These Portuguese Rolls or crusty buns are more accurately called Papo Secos … And sometimes called pops. Add linguica, vinha d’alhos or Portuguese meatballs, greens and a side of beans, and you have a wonderful meal. These are easy to make. The recipe makes 16 five-six inch rolls … not a large recipe … easily handled while putting other dishes together in a busy kitchen.

*I’m serving these for Super Bowl Sunday along with meatballs and linguica for those that want a meaty sandwich.

These are great right from the oven with just butter, too.
