Easy Bagels

35 years ago fresh bagels couldn’t be found in our city, Visalia. In fact, you were lucky if you found frostbitten bagels in the freezer section of your favorite grocer. Rather than driving the long distance to the big city to scout out bakeries for this hard to find treat, I made them!

I was never much at bread making then and was a bit fearful … believing bagels to be more complex. My husband was so impressed … So let’s keep the secret. Bagels are easy!

Bagels are very forgiving. This is a one bowl mix. 2-3 hours start to finish with only about 40 minutes total prep time. Top the water cooked bagels with sesame seeds and poppy seeds before popping them into the oven for the final baking. No one thought beyond plain, egg or onion bagels … not so long ago.

Great day for a brunch! And the chickens are laying more than we can consume. What a great excuse for this superb Italian Scramble accompanied with savory Onion Biscuits.

If you haven’t time to prepare this the first thing in the morning it makes a wonderful dinnertime meal.

The scramble is a no meat dish. Italian ham can be added if you desire. Either way it is delicious.

This is my first attempt at the new cross between a croissant and donut. I’m sure you’ve heard about this new pastry originating in Manhattan. I wanted to try it! Since I live over 2000 miles away the only way would be to make it. This wasn’t enough! I’d heard this pastry creation takes 3 days from start to finish. And I wanted to devise a recipe that had family eating this flaky melt-in-your-mouth treat in one day.

I had a plan, a recipe. It was going to work beautifully. Then I decided to use my processor! Wrong thing to do! I had not expected my new processor, gift from my brother, to pulverize, the ice cold butter. The butter chunks create the flakily layers and I had just eliminated all the flakes. I’m afraid it was the operator and not the processor! But I had to move forward with all these wonderful ingredients partially processed.

Still haven’t tried the new Manhattan pastry but these Donuts With An Attitude were delicious!

My apology, no recipe yet. But soon I’ll give it another try!

Late at night when you can’t sleep what do you do? I watch an old movie. I’m not just interested in the story but the food! When Alec Baldwin takes a delicious bite of the Croque-Monsieur I can taste it. This prop is most likely cold and verging on stale … After all Alec is an actor! The next thing I know I’m creating my own Croque-Monsieur!

What a great snack or light meal! Use a vegan cheese for the Provencal or ham it up with the Monsieur. What is the difference between Croque-Monsieur, Croque-Madame and Croque-Provencal? Ham, egg and tomato. All three are included here.

A great option for Sunday football or movie snacking. Accompany with beer or wine. And arugula with a vinaigrette for a light dinner.
