The 2015 resolution is still on! But you know as I … Complete deprivation often leads to resolution failure … with respect to dietary changes.

Here is a cookie with, in my opinion, the nutritional value outweighing the calories. My secret to not overindulging … Bake only the amount that will be eaten and shared. The remainder of dough, wrap tightly in parchment paper then foil, label and freeze. Need more for unexpected guests? Just remove from the freezer, slice and bake what you need. Easily keeps in the freezer for several months.

Inspired by Bothof’s Bakery and Betty Crocker! Chocolate or Jelly Thumbprint Cookies from Bothof’s were a childhood favorite. The convenience of the bakery vanished with our move to the country. The option became, bake them! Betty Crocker lived in our house in those days. With Betty Crocker’s help a simple recipe was created.

This is a quick recipe with few ingredients. Top it with a candy kiss or peanut butter cup or Rolo. My favorite is still a small dollop of chocolate or raspberry jam or jelly. This cookie is so basic in flavor any number of toppings can be used. Love it!

Leave well enough alone  knowing when is the trick! A hard lesson for me! I love this cake but the outcome is not always consistent. It might be from my need to make the recipe easier or more like a traditional layer cake. I’m always adding to or subtracting ingredients. The original is delicious and it’s time to leave it alone.

Sorry George, I lied! George is the newest in-law and I was mentioning my next post. I could see it in his eyes, we’re having WHAT for dessert? It doesn’t taste like prunes! OopsIt does! But for me since I don’t find prunes alone palatable but love this cake … I had forgotten.

Fruit Cake – Prune Cake, moist fruit filled with butter cream cheese frosting.

It’s no secret … I’m easily a chocoholic. And I’ve found over time good chocolate matters. If I’m taking the time to put together a chocolate dessert and investing the calories when consuming it I want the best chocolate for the recipe. I still have some candy bar favorites from the Parish’s Market days but if chalky or waxy I’m over it. Yes, candy bar ingredients have changed.

I’m in a chocolate kinda mood. And I’m looking at my chocolate dessert recipes. This one can’t be improved. Why change a good thing! But I have a cookie with a bad rap.The pictures just didn’t capture how amazing they are. I had one follower on Facebook mention in his words, looking similar to dinosaur poop.
