Okay, It’s becoming obvious I like anything pasta and berry! Chicken, not so much but this recipe can be done without chicken. Just add more berries and a little more veggies. But for today, this is a chicken, berry and feta cheese pasta salad for four. Beware! It’s hard to stop eating this salad.
-BARBECUED LINGUICA “HOT DOGS” WITH HOMEMADE BUNS
-PORTUGUESE WHITE BEANS (BAKED BEANS)
-CLASSIC BEST FOODS POTATO SALAD – MY VERSION
These Portuguese Rolls are the perfect bun for my linguica hot dogs. The ease and success of this recipe will have you and your family smiling.
Another Perry Family Recipe, Portuguese White Baked Beans. About 10 minutes to prep and some hours in the oven and you will see why our family is still talking about this recipe 50 years later. Thank you Margaret. Enjoy, Danny and Leonard!
We called this recipe a mockup. Our family benefited from the generosity of the local farmers, my dad’s customers, receiving gifts of veggies and fruit. We had a vegetable garden too! What do you do when you’ve all these vegetables? You become creative. Not until years later did I realize our family dish had a name Ratatouille!
Rather than other spices we used Italian spices. So, I like to say this is an Italian Ratatouille. And if you’d like a South-of-the-Border version that can be done easily with a change up of spices and cheeses, and by adding green chilies. How easy is that! And another dish is created!
Warning! Your family will want this over and over. One point to make here this dish is usually made with eggplant. Eggplant can make or break this recipe. The large type eggplant is often more available. This variety is usually tougher and likely a bit bitter when comparing to a Japanese eggplant. I definitely recommend some special care for the eggplant used in this recipe. Skipping this step might have your family sticking their noses in the air to this dish.
This is so simple it is almost embarrassing if it wasn’t so delicious! Did I say that correctly! The picture is this: 5 ingredients, 10 minutes total prep, 15 to roast … and lots of compliments for so little work. Love it!
I’m not saying this meal will need the Ketchup I made for my last post but some just like my homemade ketchup.
Today I’m putting together a hearty man pleasin’ dinner everyone will enjoy. And I bet Dad won’t mind helping with the grilling on his brand new barbecue. So what’s on this menu?
Oven roasted sliced russet potatoes with parsley and garlic butter
The secret of this salad is in the chopping. It can be used as a side but initially was created as a main course. The chopping of the ingredients creates a heavier more dense fork full … making this a satisfying main course. You can make changes to give it a little different taste … satisfying your family’s likes.
This is a much loved salad by my whole family. Yep, I have meat and potato guys who love it.
You might be asking why reinvent? My children all have different tastes and my goal is to provide a recipe all will enjoy. Yes, it is possible … not always! For Memorial Day I have this idea for a new potato salad recipe. Sweet potatoes! Okay, this is not going to go over well with Stephen. But I’m adding equal amounts of white potatoes and sweet potatoes. I can’t wait! If you aren’t into a combination use one or the other. It still works!
Easy and simple, this is a keeper! Roasted vegetables are just so full of flavor. Added to quinoa for a nice salad as a main dish or a generous side dish. This is how it evolved.
Several days ago I was giving thought to a Skewered Italian Sausage and Vegetables Recipe for the BBQ. I had all these beautiful vegetables from my garden. Then someone mentioned quinoa and how delicious it can be as a salad. Since half the family is vegetarian (or pretty close to being vegetarian) why not do a quinoa salad with roasted vegetables and another main dish with the Italian Sausage. (See Next Post for the Italian Sausage Recipe)
And as it turns out the recipe is actually vegan too. Yes, the grill was cleaned … so no left-over drippings!
It’s barbecue season! Have you given barbecued corn a try? This recipe is so easy … And with Aubree’s favorite toppings it’s unbeatable. I love leaving the husks attached after cooking. It really makes eating the corn with your hands easier. And in someway the husks just add to the fun of the barbecue. The husk does break off easily after cooking for those who prefer the traditional eating method.
You’ll only need a few ingredients … And did I say gluten free. With vegan mayonnaise and Parmesan cheese it’s animal products free too.
Tasty, Nutritious, Easy Recipe for corn-on-the-cob, a barbecue staple!
Celebrating Cinco De Mayo & Austin’s Birthday Too!
This is definitely a variation on Tex Mex migas. The guest of honor, Austin, may just have the same hesitations when it comes to onions and fresh tomatoes as his sister, Aubree. We are a family that orders on the side. Watching WhenHarry Met Sally, we recognize ourselves in the restaurant scenes … well, not all the restaurant scenes.
I have given recipe options for those that prefer on the side. This recipe is so very easy and just a nice meal for guests or a large family celebration.
