Ecstatic! A surprise package of cheeses, fresh and seasoned (aged), arrived from the producers of Asiago Pdo (Protected Designation of Origin) … from the Asiago Region in Italy. Cheese has been produced not for hundreds of years in this region but thousands. I’d say, practice makes perfect!

Not sure if I’ve ever tasted fresh Asiago before today … soft, melt in your mouth texture but not sticky, mild smelling and tasting, not bitter nor salty-definitely maintaining a bit of sweetness all the way through. It’s amazing! As far as shelf life after opening, this one is fairly short … maybe two weeks but don’t hold me to that. It won’t last that long around here anyway. The seasoned Asiago Pdo has three levels of maturity, 3-6 months, over 10 months and over 15 months. My little wedge was from the first level. And just an aside, domestic Asiago that I purchase locally (made in Wisconsin) is in the 5 month range. Obviously the flavor (nutty) and smell (bread-like) increase and change with the seasoned process. And rather than accepting my opinion that there is a definite taste difference, Pdo vs Domestic Asiago, do your own taste test.

But for today, this is a chicken, berry and feta cheese pasta salad for four. Beware! It’s hard to stop eating this salad.

We called this recipe a mockup. Our family benefited from the generosity of the local farmers, my dad’s customers, receiving gifts of veggies and fruit. We had a vegetable garden too! What do you do when you’ve all these vegetables? You become creative. Not until years later did I realize our family dish had a name … Ratatouille!

Rather than other spices we used Italian spices. So, I like to say this is an Italian Ratatouille. And if you’d like a South-of-the-Border version … that can be done easily with a change up of spices and cheeses, and by adding green chilies. How easy is that! And another dish is created! 

Warning! Your family will want this over and over. One point to make here … this dish is usually made with eggplant. Eggplant can make or break this recipe. The large type eggplant is often more available. This variety is usually tougher and likely a bit bitter when comparing to a Japanese eggplant. I definitely recommend some special care for the eggplant used in this recipe. Skipping this step might have your family sticking their noses in the air to this dish.

Easy and simple, this is a keeper! Roasted vegetables are just so full of flavor. Added to quinoa for a nice salad as a main dish or a generous side dish. This is how it evolved.

Several days ago I was giving thought to a Skewered Italian Sausage and Vegetables Recipe for the BBQ. I had all these beautiful vegetables from my garden. Then someone mentioned quinoa and how delicious it can be as a salad. Since half the family is vegetarian (or pretty close to being vegetarian) why not do a quinoa salad with roasted vegetables and another main dish with the Italian Sausage. (See Next Post for the Italian Sausage Recipe)

And as it turns out the recipe is actually vegan too. Yes, the grill was cleaned … so no left-over drippings!

It really makes eating the corn with your hands easier. And in someway the husks just add to the fun of the barbecue. The husk does break off easily after cooking for those who prefer the traditional eating method.

You’ll only need a few ingredients … And did I say gluten free. With vegan mayonnaise and Parmesan cheese it’s animal products free too.

This is definitely a variation on Tex Mex migas. The guest of honor, Austin, may just have the same hesitations when it comes to onions and fresh tomatoes as his sister, Aubree. We are a family that orders on the side. Watching When Harry Met Sally, we recognize ourselves in the restaurant scenes … well, not all the restaurant scenes.

I have given recipe options for those that prefer on the side. This recipe is so very easy and just a nice meal for guests or a large family celebration.
