Three Berry Cobbler

This is what happens when berries are a bargain price at the grocers. And it was such a beautiful day here .. This Berry Cobbler was enjoyed on the patio.

The rustic looking crust makes this so easy. Just wash the berries, add a few simple ingredients and place the crust over it all. Use your 10 inch skillet or an oblong baking dish. I just like the look of the skillet cobbler.

Chunky Root Soup Just Happens to Be Vegan

Root soup is a winter necessity on these icy cold days. It’s a little early for Saint Patrick’s Day but you might find this served along with corned beef or beef brisket. It’s just a wonderful meal all alone.  Light enough to have several servings.

Eat it chunky like this or use a blender to give it a creamy texture. I prefer it this way.

If you use prepared vegetable broth this can be ready to eat in 30-40 minutes. I like making my own vegetable broth … my recipe in the previous post. This is a rich recipe not requiring butter or chicken broth. Absolutely the best!

Often vegetable stock and broth are used interchangeably in recipes. So what is the difference? After researching these two, stock vs broth, it is still a little unclear. But I like to make it simple. My take … The biggest difference is in the seasonings. Broth has seasonings making it immediately palatable while stock is ready to be seasoned and manipulated in a recipe. This recipe may resemble a broth more closely. I use this broth routinely for recipes that ask for either … Even in recipes asking for chicken or beef stock or broth. I do pay close attention to salt and other seasonings when adding this broth to recipes.

I am preparing this recipe specifically to use in a chunky root soup, next post. The nice thing about this recipe … You can add vegetables you have on hand. However, these basic ingredients are required … onions, celery and carrots … and for me, garlic too.

This soup is a great option for lunch during these cold days. It is thick with vegetables and can second as a side dish instead. I use frozen peas. The nutritional value is similar to fresh picked, and it is convenient.

When I first met my future Daughter-In-Law Ann she found her way to my kitchen as all family does. Besides all the other wonderful things about Ann she is comfortable in the kitchen and a very good cook. She whipped up this salsa for our family during that first visit. It was a hit! Here is what my daughter, Missy, wrote about her recipe several years ago: I am always hungry, but this delicious oatmeal keeps me full and satisfied. My brilliant fiancé says that almonds help get rid of belly fat, and the protein in them is supposed to speed up your metabolism. The flaxseed makes you poop which is always lovely. Molasses Oatmeal Cranberry Cookies

This is a cookie my daughter would appreciate … The nutritional value is not outweighed by the calories. This is now a family recipe but the origin is unclear. I am going to give a vegan version; and then again with the changes that created this taller, less molasses tasting cookie with cranberries instead of raisins. Did you know almost all brown sugar we use for baking is stripped to white and then the molasses is added back? So, in reality we are more or less doing that here. This is a great breakfast on the run, Hint of Molasses Oatmeal Cranberry Cookies, Vegan or Not!
