Asiago Pasta Salad is one of my most popular on the blog. A meal in itself with chicken. It’s quite good as a vegetarian too. I actually love all these. The 24 Hour Salad really surprised me. The Bruschetta (not technically a salad) is also a winner even if you’re not a raw tomato fan like me.
Last week by chance I came across an Instagram post of fried potatoes and roasted poblanos. And then while speaking to my manicurist she mentions her love for fried potato & onion sandwiches. It was easy to wrap my head around fried potatoes, my Granny’s speciality. But in a sandwich? I tried the sandwich and it was pretty darn good … maybe needed a little mustard. Anyway, this got me thinking about a street taco filling. Yep! “That’s the ticket,” Granny would say.
You can use Ortega Fire Roasted Green Chiles instead of the poblanos. If you are thinking the roasting process might be a hassle it’s really not. I just use my electric burner on medium. Set the peppers right on the burner with the stem toward the outer rim of the burner to grab and move about easily, and roast all sides. It goes quickly and is safe as long as you are right there attending. Not for the accident prone. View here at my Eggplant Appetizer roasted the same way. And before Julia Child there was Fannie Farmer. My Mother in her later years acquired a Fannie Farmer Cookbook, a cookbook that was first published in 1896. Mother came from old school and followed recipes to the letter. She loved the simplicity of this cookbook. And no one was complaining about the delicious results. After Mother’s death I acquired her small collection of cookbooks. The one I cherished had long disappeared, a gift to my Mother from my Dad at their first Christmas. As my Mother tells it, she cried and cried when she opened the gift. At the age of 10 as she told the story I wasn’t sure … did she love it or hate it. For many years this GoodHousekeeping Cookbook was her go-to.

Some mornings I wake and am craving what I had for dinner. This is one of those mornings! Some prefer fruit for breakfast but give me a vegetable even if it’s V8! Yep! I had this for breakfast! Leftovers that is. Worried about the garlic breath? Well, only the pesto is garlic laden. And the garlic toast. Ha!
Pasta and Beans (Pasta Fagioli) is an economical dish with few ingredients. Eaten often by the Rizzo Family on meatless Friday’s and during Lent. When I assisted in putting this together I wasn’t sure just how flavorful the result would be. It is now on my list of favorite comfort foods. Vegan or vegetarian, or add a little Italian sausage if you must. It’s all perfectly good.
Shirred (Baked) eggs are easy, fast and a delicious way to cook eggs for one or many. Adding a little individual touch makes it extra special. Add lox, Italian sausage, breakfast sausage, bacon, or chorizo. I added linguica … no da. Oops! Make it vegetarian with bits of bell pepper, spinach, basil, onion (green or otherwise), squash…. But all this said shirred eggs can do it alone. Give it a try!
This is a quick recipe for breakfast, lunch or dinner. Totally vegetarian unless you’re inclined to add a little linguica or chouriço … more as a garnish. No chicken broth … it’s not needed! The flavor comes from the garlic, cilantro and the crusty stale bread. It’s absolutely delicious.
