Cobbler Toppers

Berry time of year! Love this berry cobbler for breakfast. Simple topping brings this together quickly. Use on your favorite fruit filling. If you’re not into a biscuit topping take a look through my other topper recipes in this post.

Biscuit Topping Recipe

Whisk together 1 Cup all purpose flour, 2 tablespoons sugar, 1 1/2 teaspoons baking powder, 1/4 teaspoon salt (1/2 scant teaspoon salt if using unsalted butter). Cut in 1/4 cup cold butter until crumbly. Add one slightly beaten egg and 1/4 cup milk and stir to just incorporate. Spoon dollops atop your fruit (in a 8 inch square or round baking dish) and place into preheated 400 degree oven and bake until top is golden 25-30 minutes. Serve warm with whipped cream or not.

Crumble Topping Recipe (rich)

Whisk together 3/4 cup all purpose flour, 1 cup sugar, 1/2 teaspoon cinnamon, 1/4 teaspoon nutmeg, 1/4 teaspoon salt. Cut in 1/2 cup cold butter until crumbly. Crumble over the top of your fruit and bake in a preheated 375 degree oven until golden brown 30-45 minutes depending too if fruit needs to cook through.

Oatmeal Topping Recipe

Whisk together 1/2 cup all purpose flour, 1/4 cup packed brown sugar, 1/4 teaspoon each baking powder and salt. Cut in 1/4 cup cold butter until crumbly. Mix in 1/2 cup uncooked oatmeal. (Use a combination of quick and old fashioned if you like. It all works.) Sprinkle over top of fruit and bake in a preheated 375 degree oven for 30-40 minutes.

Berry Filling Recipe

4 cups of blackberries or combination-washed/drained and placed into baking dish

3/4 to 1 Cup sugar (even less for tart)
3 Tablespoons flour
Dash of cinnamon (optional) and salt
1 Tablespoon butter
1/2 Teaspoon lemon juice and lemon zest

Mix the dry ingredients and sprinkle over fruit. Add butter and lemon juice & zest. Add topping and bake. Berries will bake tender in 30-35 minutes at 400 degrees or 35-40 minutes at 375 degrees.
