Fried Ravioli
Pasta Sunday + Super Bowl= Fried Ravioli. You still have time and it’s easy. Grab your favorite ravioli, cook according to directions Drain and you’re ready. (This recipe was tried without precooking the ravioli and I noticed an appreciable difference but others didn’t.)
Recipe
Olive oil for frying
13-16 Ounces of ravioli-cooked per package directions
2 Eggs
Tablespoon of milk or cream
3/4 Cup Italian Seasoned Breadcrumbs such as Progresso
Salt or garlic salt
Marinara for dipping-the sauce or dip makes the difference, choose your favorite
Cook your ravioli per directions. Drain and let cool slightly.
Beat eggs with fork pretty vigorously. Add milk to eggs and beat until well mixed.
Add a pinch or two of salt to the eggs.
Dip the slightly cooled ravioli into the beaten eggs, working with a few at a time. (Hot ravioli will cook your eggs.)
After dipping the ravioli in the egg toss in the bread crumbs until well covered.
Heat about 1/2 inch olive oil in bottom of skillet over moderate heat.
Place ravioli into heated olive oil in a single layer and brown each side to golden brown.
It’s ready. Serve with side of warm marinara, recipe here or use jarred marinara.
