Hot Dog Mac N Cheese
Yep, a husband’s favorite
Recipe
Serves 3-4
Preheat oven to 350 degrees F
1 1/2 Cups uncooked medium to large elbow macaroni-cook according to package directions
1/2 Tablespoon butter
6 Slices of bacon
6 frankfurters-your favorite (I used Turkey Dogs)
2/3 Cup milk
1/2 Teaspoon dry mustard
1 Tablespoon dried minced onion; OR 1/4 Cup fresh minced onion (sauté in 1/2 T butter for a softer to tooth texture)
1 Cup grated cheese, more for topper-Colby and Jack
Salt and pepper to taste
Parsley for garnish (optional)
Sprinkle with super fine bread crumbs (optional)
Cook macaroni per package directions. Drain and place into large bowl. Add 1/2 T butter to drained cooked pasta and mix. Set aside.
Cook bacon slightly to render off fat. Be sure and not cook to crisp. Drain and set aside.
Cook hot dogs in water to render off some fat. Drain and set aside.
Heat milk in saucepan or microwave just to warm. If using dried onion add to milk to soften.
Add all ingredients except frankfurters, bacon, breadcrumbs and parsley. Mix and pour into a buttered 9″ square baking dish. Be sure to taste for salt and pepper need. Reminder: The frankfurters and bacon may add saltier taste.
Wrap one slice bacon around each frankfurter. And place on top of the Mac N Cheese. Bake 30 minutes.
Sprinkle with parsley and fine bread crumbs. (Both optional)
