Linguica Kale Onion & Peppers

This simple main dish can become your breakfast omelet too. Use your favorite greens, kale here but spinach for a milder flavor. Any of the greens will do. This is one of those quick recipes that will have your family eating in 20-30 minutes. Can easily become a soup by adding a vegetable broth. Very versatile.

Recipe

 

12 Ounces linguica-slices 3/4 inch, and cook slightly to render off some of the fat
2-3 Tablespoons olive oil
1 Yellow onion-chopped
2 Cloves garlic-minced
1 Green bell pepper-chopped
*2 Cups cooked cannellini beans (if using canned-drained and rinse lightly)
4 Cups chopped kale (remove tough stems before chopping)
2 Chopped Roma tomatoes or 8 ounce can petite cut tomatoes
2 Generous teaspoons paprika
Salt and pepper to taste
*2-3 Cups cubed russet potato can substitute for the beans (since raw it will increase cooking time)

Heat 2 tablespoons of oil over medium heat in a large skillet and sauté the onion until translucent.

Add the potatoes if using (and the additional T of oil) and cook until almost tender, 15-20 minutes.

Add the bell pepper and sauté with onion (or onion and potato) until slightly al dente. In the last minute or so add the garlic.

Add the partially cooked linguica.

Add the beans (if using instead of potatoes) and tomato and heat through.

Stir in paprika. Taste for need of salt and pepper.

Layer the well chopped kale over all and place a lid to help steam cook. Just takes a few minutes if the greens are well chopped. Cook to your desired texture. Linguica should be cooked through.

Stir to blend the flavors.

For Omelets:
-2-3 Eggs per individual omelet
-Shredded cheeses of your choice
Beat eggs until fluffy. Heat omelet pan, medium heat, that has been oiled slightly with olive oil. Wipe out excess with paper towel. Pour 2-3 beaten eggs into the pan and cook until top is almost dry to touch. Use lid as needed to speed cooking. Watch for too much heat from burner it will over brown the bottom. Now layer the filling, sprinkle with cheese and fold over to remove from pan. Sprinkle with more cheese as desired.
