Slice and Bake Cookies

Mom’s recipe for Ice Box Cookies when Nucoa was a favorite cookie ingredient. No Nucoa here! If these cookies remind you of chocolate chip cookies without the chips … Yep, that’s what I taste. So, add chocolate chips if you like and you have homemade chocolate chip cookies at your fingertips. I keep a roll in the freezer for those immediate needs for family and friends. Add what you like and subtract the nuts if to your liking. Here are some great ingredients to add: assorted flavored chips, broken pretzels, crushed Butterfingers, crushed peppermint, your choice of nuts.

Recipe

 

1 Cup butter-room temperature
1/2 Cup of each brown & white sugar
2 Eggs
2 1/2 Cups all purpose flour and more for rolling out
1/2 Teaspoon baking soda
3/4 Teaspoon salt
1 Teaspoon vanilla
1 Tablespoon hot water
1 Cup nut pieces

Measure flour and place into bowl with baking soda and salt. Whisk together.

Cream together sugar and butter. Add eggs and beat until creamy.

Add dry ingredients along with vanilla and water. Mix until just incorporated.

Stir in nuts.

Place dough onto a floured surface and knead to form a smooth ball.

Divide in half. Form each into 2 inch diameter logs.

Refrigerate until firm. Or speed the process by placing in the freezer.

Preheat oven to 350 degrees F.

Slice a little over 1/4” thick and place on parchment paper covered cookie sheets. These will spread slightly. Space 1 1/2″ apart.

Bake until the edges turn slightly brown. About 10-12 minutes depending on your oven and the thickness of your slices. The tops of the cookies should look dry.

Keep unbaked dough in the refrigerator for up to 4 days for fresh taste. Or freeze up to several months.
