One Pan Egg Burrito
Loving this vegetarian (or meaty if you like) burrito. Just happened upon this technique and find it so easy and fast. Perfect for a crowd. Nadiya, winner of a BBC Bake off, calls her recipe an egg role. Adding the tortilla as the eggs are cooking is a perfectly great way to put this together in minutes. Personalize it as you’re cooking. Spicy is my thing. So, green chilies or jalapeños go right into the eggs along with cheeses. If you’re into meaty burritos add crumbled cooked chorizo or linguica. These can be served cold, and preparing a day ahead works. Just tightly wrap individually after cooling and refrigerate

Recipe
Use a skillet with a cooking surface the size of the tortillas you are going to use. Non-stick makes this so much easier. Use either corn or flour tortillas 6-8 inches in size is a good place to start. You might be able to use a thin flatbread if you prefer but I haven’t tried this.
6 Tortillas
3-4 Tablespoons butter
12 Eggs-beat by hand until fluffy (not foamy) with 1/4 cup milk
Add salt and pepper to beaten eggs as desired. (Not too much salt if adding cheese.)
3-4 Green onions thinly sliced
7 Ounces diced fire roasted green chilies
1 1/2 Cups shredded Sharp Cheddar cheese or cheeses of choice
1 Cup meat of choice-precooked and crumbled (optional)
Serve with fresh salsa or red sauce.
Garnish with parsley or cilantro.
Heat skillet over medium to medium high temperature.
Add 2-3 teaspoons of butter and rotate butter around in the skillet quickly (by lifting skillet off heat) until cooking surface is covered.
Place skillet back on heat and quickly add enough egg (about 1/2 cup) to cover the skillet cooking surface. As the egg begins to cook (and the total cooking is about 2 minutes) sprinkle with green onion, chilies, 1/4 cup shredded cheese, 1-2 T crumbled meat-optional.
Place the tortilla over all and swirl into the ingredients gently. As the egg cooks at the edges loosen the egg with a spatula or silicon scraper. Then flip the loosened egg completely over onto the tortilla with the spatula. The egg must have set well before this is attempted. Once the tortilla is now on the bottom and egg on top, cook until the tortilla is toasting. Use a spatula and remove to a flat surface and roll. No need to fold in the ends as the traditional burrito.
Repeat until all eggs are cooked. Complete cooking time about 20-30 minutes for 6.
Cut burritos in half to serve. Serve warm or cold.
