This is the real deal! No faux Italian sausage here. But I bet this would work perfectly with chicken or turkey Italian sausage as well. Choose mild or spicy. Vegetable choices are up to you too. Tomatoes do tend to cook more quickly than the sausage but can work nicely if the sausage is cut a bit smaller to decrease the cooking time. Ready in 30 minutes or less with minimal kitchen cleanup.
Easy and simple, this is a keeper! Roasted vegetables are just so full of flavor. Added to quinoa for a nice salad as a main dish or a generous side dish. This is how it evolved.
Several days ago I was giving thought to a Skewered Italian Sausage and Vegetables Recipe for the BBQ. I had all these beautiful vegetables from my garden. Then someone mentioned quinoa and how delicious it can be as a salad. Since half the family is vegetarian (or pretty close to being vegetarian) why not do a quinoa salad with roasted vegetables and another main dish with the Italian Sausage. (See Next Post for the Italian Sausage Recipe)
And as it turns out the recipe is actually vegan too. Yes, the grill was cleaned … so no left-over drippings!
It’s barbecue season! Have you given barbecued corn a try? This recipe is so easy … And with Aubree’s favorite toppings it’s unbeatable. I love leaving the husks attached after cooking. It really makes eating the corn with your hands easier. And in someway the husks just add to the fun of the barbecue. The husk does break off easily after cooking for those who prefer the traditional eating method.
You’ll only need a few ingredients … And did I say gluten free. With vegan mayonnaise and Parmesan cheese it’s animal products free too.
Tasty, Nutritious, Easy Recipe for corn-on-the-cob, a barbecue staple!
This is so delicious! Can you tell? Here’s the story about this recipe. This is actually my recipe for Eggplant Parmesan. So, if you happen upon this page and are vegetarian just substitute one large sliced eggplant (with moisture removed) for the chicken. Veal? I can’t.
Remember my Italian food critic from my previous Italian cuisine posts? Just to refresh … 15 years of testing these recipes. This is his fav Eggplant Parmesan recipe. And it converts perfectly to chicken … on a bed of pasta.
Spicy Applesauce Muffins that can be reinvented. I love reinventing! Myself included.
Are you looking forward to Mother’s Day Sunday? Or, are you ambivalent?
Picking a Mother’s Day card for my mother is always difficult. I can’t seem to relate to the verses I find in the majority of Mother’s Day greeting cards. For many years this was a mystery … The ambivalence and struggle for the right card and gift. And I didn’t experience an ‘aha’ moment exactly. But today the ambivalence about Mother’s Day has gone.
There are so many I appreciate on Mother’s Day, family and friends. My daughter and daughter-in-law, April especially … The young mothers of today. And I love being celebrated by my children.
I chose this recipe because of its simplicity. Breakfast in bed is a favorite treat children put together for mom. This recipe can be done by little hands. Or wrap these muffins in a special baking dish as a lovely gift for a mom.
The secret of good bread making beyond the ingredients … Don’t be afraid to use a little muscle in the kneading. No one made bread better than my grandmother. She often made 20 loaves at a time. That’s some kneading, or more correctly a lot of muscle. Yep, her arms were strong, and she had well formed deltoids before it was in vogue.
This morning I enjoyed a generous slice of this bread with coffee my grandmother’s way, cream and sugar. Yep, she was from the East Coast!
Just Perfect!
This recipe requires no condiments to enhance the flavor. Eat it hot from the oven. You’ll see. It’s amazing!
Happy Cinco De Mayo! We’re celebrating! How about you? Have you tried this cake? If you haven’t you’re missing out! A special surprise is in store for you!
This recipe is quick and easy. I hope you’ll give it a try!
Celebrating Cinco De Mayo & Austin’s Birthday Too!
This is definitely a variation on Tex Mex migas. The guest of honor, Austin, may just have the same hesitations when it comes to onions and fresh tomatoes as his sister, Aubree. We are a family that orders on the side. Watching WhenHarry Met Sally, we recognize ourselves in the restaurant scenes … well, not all the restaurant scenes.
I have given recipe options for those that prefer on the side. This recipe is so very easy and just a nice meal for guests or a large family celebration.
This looks like a sandwich you eat while watching or discussing the game, football to be exact. This is true. BUT I’ve also heard this sandwich with fries is a traditional lunch around the Porto area in Portugal. OK maybe it doesn’t look like this exactly.
There are two schools of thought about the origin of the Francesinha. One suggesting this was first seen around the 19th century. And the second that this was developed as a take on the French croque monsieur around the 1960’s. Whichever, it was fun to recreate.
This recipe is mine and concocted from suggestions of what is often used in the little frenchie. The list of ingredients is endless. I chose some favorites. Actually, the whole list was from my favorites but I wasn’t looking to make a foot long sandwich! As it turns out this sandwich is easily two servings. So, what is on this suggested list! You’ll see!
These are icy cold, richly refreshing and perfect for the hot days ahead. The secret ingredient? Frozen fruit or ice keep these cold and thick until the last gulp or spoonful. They all have ice cream, the slow churned version with half the fat. We could talk about substitutions here but for this post I’m using ice cream. Into calorie counting? The Root Beer Ice Freeze has 50 calories, the Blueberry Cream Soda Freeze 75, and Strawberry/Berry Milkshake and French Silk Milkshake Freeze 125. All 8 ounce drinks.
