Portuguese Olive Oil Biscuit Cookies
These are great anytime! Just as the name implies this is a cross between a biscuit and a cookie. Have it with your breakfast coffee, afternoon tea or after dinner Port. The right amount of sweetness. Play with the flavor a bit by adding anisette or lemon zest. Or for a very subtle taste add brandy. Hope you enjoy this Portuguese pantry recipe. I love it!
Recipe
Preheat oven to 350 degrees F.
Use a baking sheet covered with parchment paper for baking.
3 Eggs-room temperature
1/3 Cup quality olive oil
1/3 Cup sugar
Pinch of salt
1 1/2 Cups+ all purpose flour
1 Tablespoon anisette or brandy or 1 teaspoon lemon zest or a little cinnamon-only one choice here please (The brandy is hard for me to discern.)
Beat eggs, olive oil and sugar until fluffy.
Add the salt and 1-1/4 cup or so of the flour along with your choice of flavor.
You will find the dough is pretty wet and elastic. Add more flour if needed to prevent stickiness.
Remove the dough to a well floured surface. Roll out to about 1/4 inch+ to 1/2 inch. Use your choice of cutter. Make sure cutter is dipped into flour.
Place dough on cookie sheet covered with parchment paper. Bake about 15-20 minutes until golden brown.
Cool and serve.
