Red and Yellow Pepper Salad
Healthy Delicious Red & Yellow Pepper Salad. Serve as an antipasto, side or lite main dish.
Recipe
2 Tablespoons olive oil
1 Large garlic clove-sliced thinly
2 Red bell peppers (or 1 red and 1 orange)-sliced in long strips
1 Yellow bell pepper-sliced in long strips
1/2 Sweet yellow onion-sliced thinly
1/4-1/3 Cup aged balsamic vinegar
1/4 Cup chiffonade fresh basil leaves
In a large skillet sauté the garlic in the olive oil over low-medium heat for several minutes. Remove the garlic at this point and add it later or not. Turn the heat to medium to medium-high and add the sliced peppers. Sauté the peppers until they reach a slightly tender texture or as you prefer. (However, keep al dente)
Let the peppers cool slightly. Toss with the sliced onion.
Drizzle with the Balsamic vinegar and sprinkle with the basil.
