Easy Roasted Potatoes
This is so simple it is almost embarrassing if it wasn’t so delicious! Did I say that correctly! The picture is this: 5 ingredients, 10 minutes total prep, 15 to roast … and lots of compliments for so little work. Love it!

Serves 4
Preheat oven to 375 degrees F
3 Large russet potatoes-not peeled, scrubbed clean and sliced 1/4 inch thick
6 Tablespoons butter-prefer unsalted
1 Garlic clove-smashed
Sea salt for sprinkle
1-2 tablespoons chopped parsley
1/3 Cup water
Use a roasting pan large enough to single layer the potato slices. Cooking spray the pan. Single layer the slices. Add the water and place into the oven at 375 degrees for 10-15 minutes. The potatoes will be almost done at this point. Increase your oven to broil for approximately 5 minutes. Watch carefully not to over brown. Remove from oven.
In a small sauce pan melt the butter and add a crushed clove of garlic. Without browning continue to heat for a minute. Then remove from heat and allow to cool a minute or two. Remove the clove.
With tongs or spatula carefully single layer one-half the cooked potatoes onto a platter. Spoon half the melted butter over the layer and sprinkle half the parsley. Add an additional layer of potatoes on top and spoon the last of the butter. Sprinkle with the remainder of parsley. Add a sprinkle of sea salt … very sparingly if your butter was salted.
