Shepherd’s Pie
The entree was a hit! George, the meat-n-potatoes birthday guy, loved it! There are many variations to this recipe.You might add your own touch like fresh peas, chopped celery, mashed cauliflower in place of potatoes but I like this just as it is. It absolutely has an amazing flavor and it’s so very moist.

Recipe
Preheat oven to 375 degrees F.
1 Tablespoon olive oil
1 Large onion-chopped
2-3 Carrots-peeled & diced small
2-3 Cloves minced garlic
3 Pounds ground beef or lamb
1 Teaspoon ground savory
4 Tablespoons butter
2 Tablespoons flour
1 Cup beef broth
Salt and Pepper to taste
3-4 Large white potatoes-cooked and mashed with butter & milk or cream, salt & pepper to taste
Over medium heat in a large skillet saute’ the onion & carrots in the oil for a few minutes until onion is limp. Add the garlic for one minute. Avoid scorching. Remove to a large mixing bowl.
Add meat to the same skillet over medium/high heat and cook & lightly brown through. Drain thoroughly. Add savory, and salt and pepper to taste. Stir well. Add to the mixing bowl with the onion/carrot/garlic.
With two knives crosscut the meat until very fine. You can put the meat through a meat grinder too but blender is not recommended.
Next add butter to the skillet over medium heat. When it begins to bubble add the flour and stir until smooth. Add the broth and stir. Let it thicken a bit. ADD this to the ingredients in the large mixing bowl. Stir until well mixed. Taste for need of salt and pepper.
In a buttered oblong (or other) baking dish add the mixture and level. Spoon the potatoes in about 6-8 scoops over the meat. Smooth the potatoes with a fork. Bake in 375 degree preheated oven for 30-35 minutes. This can be done without covering the dish or you can cover the dish if you fear your ingredients will become dry.
