Ultimate Berry Dump Cake

After a few quiet days on the blog, I wanted to come back with something that feels like a warm welcome. This is the kind of dessert that does just that! It’s easy, comforting and hard to resist.

This Berry Dump Cake is one of those recipes people make once and then keep in their back pocket forever. No mixing bowls, no complicated steps and it works beautifully with fresh or frozen fruit.  Serve it warm with a bit of lightly sweetened whipped cream, or ice cream.

Recipe

Preheat oven to 350 degrees F

Ingredients:

5 Cups blueberries or mix berries
1/4 Cup sugar-you may use very little for blueberries
1 Teaspoon lemon juice and lemon zest (optional)
1 Box yellow cake mix (You can use white cake mix but it may taste much sweeter even if the sugar content is much the same. Also, note that not all yellow cake mixes are the same. Avoid cake mixes that have sugar as the first ingredient.)
1/2 Cup butter melted (You may need additional, up to 1/4 cup, if coverage is difficult.)

Instructions:

Spread the berries evenly over the bottom of a lightly greased 9×13 baking dish.

Sprinkle the berries with the sugar, and lemon juice & zest if using.

Spread the cake mix evenly over the berries but do not mix.

Drizzle the melted butter over the top, covering the cake mix as completely as possible.

Bake for approximately 40-45 minutes until the top is golden and fruit is bubbling around the edges.

Cool slightly before serving. Can be served room temperature as well.
