Portuguese Linguica Sausage, A Family Recipe

Yep, this is my brother, Dan, who was one tough high school and college football player … even playing for the Arkansas Razorback Team way back when.

He has mastered the taste of Portuguese cuisine, notably from the Azores. Never being timid about spices … this being taught by our Grandmother Rose. Cumin and cinnamon are of particular importance.

Dan and his son, David, are the cooks in his family. Well, wife, Ruth, can certainly hold her own but she leaves this cuisine to Dan. Thank you Dan and David for including us and providing the photography. Dan has promised to send me some linguica soon.

Monterey Jack Cheese & Green Chile Sausage

David’s our family master chef. We’re lucky enough to have his two new sausage recipes. If this recipe is started early in the day it can be ready to eat by your evening meal. No marinating, and limited smoking time, about 5 hours. You’ve got to give this a try. Thank you David for such a delicious recipe. Enjoy these two recipes of David’s too, deep-pit-barbecue and wild duck.

Before beginning this recipe I recommend reading the directions for linguica making, here. This will acquaint you with supplies needed and casing, grinding and stuffing particulars.

Linguica Chowder

Linguica Lovers Only! Seriously! When my brother visits we have linguica … Linguica and Peas, Linguica and Eggs, Linguica and Greens, Linguica and Beans, Pizza with Linguica and just plain Linguica. My brother’s a purest and linguica alone is his favorite. I, on the other hand, put it in just about anything! Here’s an easy soup and the main ingredient … you’ve got the picture!

When we’re not making linguica we are buying some of our favorites locally, Raven’s of Armona and Lemoore Locker. But honestly, we love it all!

Portuguese Beans with Linguica

This is the time of year my dad put together a big lunch for his customers, farmers and ranchers. (First published December 2013.) He would do most of the food preparation himself. Yep, there could be a huge crowd. One item on the menu was Portuguese beans. So, the question is do I have my dad’s recipe or his mother’s recipe? Or are the recipes the same? Anyway, get your pound of pintos soaking, and don’t eat the last of the linguica!

Why am I thinking about these beans? Aside from the thoughts of the yearly luncheon, my brother made another batch of linguica. He is still working to perfect the recipe! And someone shared her prepared Portuguese beans and linguica with me recently. Just delicious Melissa! Let me see how my dad’s recipe compares!

Linguica, Fava and Onions

Linguica Fava OnionsMany of you have followed my brother’s recipes. They’re amazing! He can make a Whole Wheat Bread to die for! His Pit Beef can’t be surpassed. His duck, now there is one amazing Wild Duck. But his passion is making linguica. So, a few weeks ago after spending 4 1/2 hours hand cutting 75 pounds of pork butt, putting everything together for marinating, and claiming this will be the best batch of Homemade Linguica yet! … And his very last go-at-it! HE FORGOT THE CUMIN! This ex-Arkansas Razorback isn’t into tears and he wasn’t when he broke the news but there was definitely disappointment in his voice. He is sending me some for Christmas and I’m sure it won’t need too much dressing up. He’s let me know he now has to make another batch … one last perfect batch.

Slow Cooker Style

Portuguese Sausage and Sauerkraut Ask my brother if there’s a perk to being the family patriarch! He might just mention this dish. I’m celebrating Father’s Day with one of my brother’s recipes. We don’t have to think alike to enjoy those family traditions! And everyone in the family seems to have a different opinion right now! Oops! Enjoy this amazingly hearty but not too heavy for warm weather recipe. It’s a slow cooker classic. Yep, Dan makes his own sauerkraut too. I’ll be taking that up another time. Enjoy some of these previously posted recipes my brother has shared with me while the crock pot does all the work. Linguica is one of our key ingredients. The variety we use here, Raven Brand, has less fat in my opinion. Important when not precooking. And paprika? I doubt it. Check them out, here. Located in the small town of Armona, California.
