Cinnamon Beans Portuguese Style

Another take on Portuguese Beans inspired by a Cousin Perry recipe, and this 100 year old picture of the Freitas Family. Yep, these are my relatives in this photo … gone but not without leaving a rich culture behind. Pictured is the celebration following the traditional yearly pig butchering.

The ingredients in this recipe might surprise you … especially the amount of cinnamon used. Morcela sausage is another main ingredient but not always available locally or certain times of the year. I opted for Portuguese Chourico instead. Linguica could easily be used. The secret is to grind the sausage … adding to the beans deliciously spicy bits to tease the palate.

Portuguese Rolls (Pops)

These Portuguese Rolls or crusty buns are more accurately called Papo Secos … And sometimes called pops. Add linguica, vinha d’alhos or Portuguese meatballs, greens and a side of beans, and you have a wonderful meal. These are easy to make. The recipe makes 16 five-six inch rolls … not a large recipe … easily handled while putting other dishes together in a busy kitchen.

*I’m serving these for Super Bowl Sunday along with meatballs and linguica for those that want a meaty sandwich.

These are great right from the oven with just butter, too.

Smoked Brisket Dan’s Style

Didn’t get a taste but I’m betting this tastes as good as my recipe if not better. My recipe here. My brother is the family barbecue and meat smoking expert. We were introduced early on to the smoky flavor of barbecued steaks and smoked Portuguese Sausage. We just can’t help ourselves when it comes to the taste.

This recipe is an all day activity but most of this is observing … A great dinner for that special picnic and all day swim party. You must try my brother’s pit meat recipe too, here.

Portuguese Peas Marie Style

A family recipe I would have never tasted if it weren’t for Margie. Margie put together a family gathering (yesterday) … Through ancestry.com she found my brother (and then me), and Marie (her family) and many others. Now, I’m not advocating family searches. But in our case, my brother & me, we were curious. My father’s father died at a young age and dad just slipped into the Willitts and Perry families. Dan & I heard very little about dad’s other side of the family. Not for the reason that perhaps you might guess. It was a matter of life getting in the way. So when we heard from Margie we were excited … as excited as she was!

What does it have to do with Marie! Well, she is one of dad’s first cousins and made the event. This recipe is what she brought to our luncheon. Her daughter brought some delicious desserts too. Marie’s peas reminded me so much of my Grandmother’s recipe … more so than my own version of my Grandmother’s. I could taste the bit of wine, and keep in mind, the linguica makes this dish. Not just any linguica! But did I get the name of the brand she used … no! My grandmother often used homemade. Have you tried my brother’s recipe for linguica? Try it here!

Smoker Brisket

Our Valentine’s Gift

Perfect the first time! A home run! This smoker received almost a perfect score on Amazon for good reason. (Purchased locally at Home Depot.) Easy and slick. I did follow the directions! The only drawback … you’ll smell like smoke during the process. After you become a Pro it can be done over night while you sleep. Of course, you’ll have the safety risks ironed out. Just a fun way to cook, and I can finally make my own linguica.

For this brisket I used Emeril Lagasse’s rub. If anyone knows about these spices he does! He suggested mesquite for the smoking but I used hickory (pretty strong compared to some woods) which worked well. (Mainly using regular Kingsford briquets with 3 chunks of hickory placed by the bottom vents inside the briquet chamber. And if you haven’t used a chimney lighter you must get one. It works perfectly in minutes with just lighted paper.) Because the Weber Smoker has such a stellar rep I followed their directions very closely, kinda. I filled the briquet area of the smoker as directed for the time and meat I was smoking but removed about 35 pieces to the chimney lighter. Lit these 35 first and then added to the remainder and the three chunks of hickory. Really worked well! I’ll branch out as I become less of a novice.

Shirred Eggs Your Style

Shirred EggsShirred (Baked) eggs are easy, fast and a delicious way to cook eggs for one or many. Adding a little individual touch makes it extra special. Add lox, Italian sausage, breakfast sausage, bacon, or chorizo. I added linguica … no da. Oops! Make it vegetarian with bits of bell pepper, spinach, basil, onion (green or otherwise), squash…. But all this said shirred eggs can do it alone. Give it a try!

Portuguese Egg & Bread Soup

Portuguese Egg Soup

 

Not exactly a soup or stew but just as hearty!

This is a quick recipe for breakfast, lunch or dinner. Totally vegetarian unless you’re inclined to add a little linguica or chouriço … more as a garnish. No chicken broth … it’s not needed! The flavor comes from the garlic, cilantro and the crusty stale bread. It’s absolutely delicious.

All comes together in about 15 minutes.

Family Vacation!

VacationWhat a son-in-law and daughter! Making me part of their yearly Hawaiian Island vacation! And I can’t thank them enough. The resort was fabulous … The food never-ending … The sites breathtaking. All this and with my daughter’s little family. It was perfect.
