German Apple Cake

Apples I didn’t want to go to waste. What a great choice if I do say so! The ingredients list is minimal … producing this beautiful and tasty cake. Oh yeah, have it for breakfast! Heavy with apples surrounded by a slightly sweet vanilla cake. Try it today!

Recipe

Preheat oven to 350 degrees F.

4 Apples (I used Granny Smith) peeled, quartered and sliced thin lengthwise but not all the way through
Juice from one lemon
1 Teaspoon cinnamon
1 Cup sugar-divided
1/2 Cup butter-room temperature
3 Eggs
2 Teaspoons vanilla
1 1/3 Cup whisked flour
2 Teaspoons baking powder
1/2 Scant teaspoon salt
2 Tablespoons milk
Powdered sugar for sprinkling

Sprinkle lemon juice over prepared apples and toss lightly. Not all the lemon juice will end up in the cake.

Mix 1/2 Cup sugar with cinnamon. Remove each apple quarter, one at a time and roll in cinnamon sugar. Place on a dish and set aside. If pieces break off, not to worry.

Beat together the butter and the remaining 1/2 cup sugar until creamy and light.

Add one egg at a time and beat thoroughly after each.

Add vanilla and mix.

Whisk all purpose flour and then measure Place into a small separate bowl. Add measured baking powder and salt to flour and whisk through.

Add the flour to the butter/sugar/egg mixture along with milk and mix just until incorporated. Batter will be thick.

Prepare your baking pan or dish with cooking spray. Pour batter into a 9 inch nonstick removal bottom tart pan or an eight inch square baking dish.

Place your apples (and loose pieces) on top the batter one at a time, pushing into the batter.

Place your pan into the center of your preheated oven and bake until done, 45 to 60 minutes.

Check for doneness with a toothpick to the center of the cake. It should come out clean. Avoid over-baking. Baking apples like Granny Smith will cook up faster than other apples if you desire a softer texture to the apples.

Remove when done and after 10-15 minutes lift false bottom and cake from fluted tart pan.

Sprinkle with powdered sugar.

Serve warm or cold. Add whipped cream or ice cream if desired.
