Applesauce Pecan Bread

Moist with little oil. The fresh applesauce does the trick. If you love spices and pecans you’ll love this.

Recipe

Preheat oven to 350 degrees F.
Oil or butter a standard size loaf pan. Sprinkle interior with flour and shake out excess.

2 Cups all purpose flour
1 Teaspoon baking soda
1/2 Teaspoon baking powder
1/2 Teaspoon cinnamon
1/4 Teaspoon nutmeg
1/2 Teaspoon salt
2 Eggs
1 Cup sugar
1/3 Cup coconut oil or light olive oil
1 Generous cup unsweetened applesauce
3/4 Cup chopped pecans

Whisk together the first 6 ingredients and set aside.

Beat eggs until well mixed. Add the sugar and beat until fluffy.

Add the oil and applesauce to the egg mixture. Mix well.

Add the dry ingredients slowly and mix until just incorporated.

Fold in the pecans.

Add the batter to the prepared loaf pan and spread evenly.

Add topping below.

Bake until done in preheated oven, approximately 1 hour.

Topping

1/3 Cup all purpose flour
1/4 Cup sugar, brown or white
3 Tablespoons cold salted butter
1/4 Cup chopped pecans

Mix together flour and sugar.
Cut in cold butter. Mixture will be crumbly.
Mix pecan into crumbles.
