Au Gratin Potatoes and Peas

This is a side dish with a main dish capability. It’s a great vegetarian meal. Add a hardboiled egg on the side per person for a hearty meal. The recipe comes together quickly with pantry ingredients.

Recipe

Preheat oven to 350 degrees F.
Use an 8 inch square baking dish

2 Tablespoons butter
1/2-3/4 Cup minced yellow onion
1 Clove garlic-minced
2 Tablespoons all purpose flour
1 Cup milk
4 Medium potatoes-peeled & sliced thin-about 3 cups
2 1/2 Cups frozen peas-thawed or not
1 1/2 Cups grated cheddar cheese
Salt and Pepper

Olive oil or butter an 8 inch square baking dish.

Starting with the potatoes place a single layer over the bottom of the dish. Then a layer of peas. Follow with a sprinkle of salt and pepper.

Add another single layer of potatoes then peas. Follow with a sprinkle of salt and pepper.

One last set of layers, then begin the sauce.

Melt the butter in a medium skillet and add the onion over medium low temperature. Sauté until onion is tender but not browned. Add the garlic and give a stir.

Sprinkle the flour over the butter onion-garlic mixture stirring as you go. Next add the milk as you stir. This will thicken quickly. Add salt and pepper to taste.

Pour sauce over the layers of potatoes and peas. Sprinkle with the cheese, cover with foil (Avoid touching the cheese with the foil.) and bake 45 minutes.

Remove foil and bake an additional 15 minutes.

Serve with hardboiled eggs for a hearty meal.
