Braised Spicy Brisket or Chuck Roast

We love our brisket but have you noticed … it’s pretty expensive these days. Plus, brisket isn’t always available at our local grocer’s. When it is, the cut can be huge. Chuck roast is my brisket substitute. It’s cheaper, often on sale and plentiful at our local grocer’s. I find chuck roast requires shorter cooking time vs brisket of the same weight.

Recipe

2 Pound chuck roast-pat meat dry. Slather with rub. Place in plastic bag. Refrigerate for 4 hours or less if needed.
Rub:
1/4 Cup extra virgin olive oil
1 Tablespoon sweet paprika
2 Teaspoons salt
1 1/2 Teaspoons of each of the following: garlic powder and fresh ground black pepper
3/4 Teaspoon ground turmeric

3 Tablespoons extra virgin olive oil
1 Large yellow onion-peeled & sliced lengthwise
1 each, orange bell pepper, red bell pepper-remove top and seeds, wash and slice lengthwise
2 Pounds small yellow potatoes-not peeled but scrubbed, cut in half
Salt and pepper to taste
Parsley flakes or fresh chopped for garnish

In a shallow (but big enough to hold all snuggly) heavy bottomed braiser, dutch oven or similar stainless steel skillet (with  a tight fitting lid for later) add 2 tablespoon of oil and heat over medium heat.

Add sliced onion and sauté until tender. This may take 10 minutes or so. Stir on occasion. Add the bell pepper slices and continue the sauté for a couple of minutes more.

Increase the heat to medium high. Move onion and bell pepper to the sides of the pan. Add a tablespoon of olive oil to the center of the pan as it is heating up. Place the meat in the center and brown on both sides.  Stir the onion and bell pepper occasionally to avoid over cooking. Decrease the heat to low and cover with tight fitting lid. Simmer on low for 1 1/2 hours. This is cooking with steam.

Add potatoes. Turn heat to low. Salt and pepper the potatoes. Spoon drippings over potatoes before adding the water. Add 1-2 cups of water depending on current level of juice in the pan. Cover and continue cooking on the stove top until potatoes are done about 45 minutes. Or place braiser into a 350 degree F preheated oven for the same amount of time.

When done sprinkle with parsley flakes.
