Portuguese Rolls (Pops)

These Portuguese Rolls or crusty buns are more accurately called Papo Secos … And sometimes called pops. Add linguica, vinha d’alhos or Portuguese meatballs, greens and a side of beans, and you have a wonderful meal. These are easy to make. The recipe makes 16 five-six inch rolls … not a large recipe … easily handled while putting other dishes together in a busy kitchen.

*I’m serving these for Super Bowl Sunday along with meatballs and linguica for those that want a meaty sandwich.

These are great right from the oven with just butter, too.

Sicilian Fig Cookies

Who’s Clara? She’s a home cook I came across on Youtube. When I saw her recipe for Cucidati I knew it was one I wanted to try. Problem was a recipe that yielded 100’s of cookies was just too much for my family … even if Cucidati keep for a month in an airtight container. Clara is right … her fig cookies are the best. And Clara, the suggested whiskey is a perfect touch. Here is Clara in action in 2008 at 93 years young. I have taken her recipe and made it manageable … yielding 50+ one-two inch cookies. Make this your holiday tradition. Absolutely the best! Thanks Clara!

Spiced Candied Pecan Scones

Love love pecan season. First up is a big batch of Spiced Candied Pecans. Great snacking but more often added to richen recipes. They’re the main ingredient in these deliciously rich scones. Make a great coffee or tea accompaniment. We like them with soup too.

Cheesy Biscuits

Whips up easily! Few ingredients … you have in your pantry. I woke up this morning craving homemade biscuits but wanted to try something that could be a standalone breakfast. Not that this biscuit in smaller form isn’t the perfect appetizer. I love the cheese and green chilies combination, but I found this quick recipe by Sargento that combines cheese and butter. Oh, and black pepper too. Rich, flakey and delicious!

Chai Donuts

Nothing like a donut with your coffee. My favorite are glazed raised donuts. Not only do raised donuts take some hours they go stale fast … although I have the practice of freezing them before that happens. Sometimes it works. What’s great about these?! They’re ready in 30 minutes. And go stale? Not! Not that quickly … if you have any left that is! What if you aren’t into Chai Spice? How about Apple Spice then? Or Pumpkin Spice? Or leave out the spice and add a drizzle of you favorite glaze.

One Pan Egg Burrito

Loving this vegetarian (or meaty if you like) burrito. Just happened upon this technique and find it so easy and fast. Perfect for a crowd. Nadiya, winner of a BBC Bake off, calls her recipe an egg role. Adding the tortilla as the eggs are cooking is a perfectly great way to put this together in minutes. Personalize it as you’re cooking. Spicy is my thing. So, green chilies or jalapeños go right into the eggs along with cheeses. If you’re into meaty burritos add crumbled cooked chorizo or linguica. These can be served cold, and preparing a day ahead works. Just tightly wrap individually after cooling and refrigerate

Linguica Kale Onion & Peppers

This simple main dish can become your breakfast omelet too. Use your favorite greens, kale here but spinach for a milder flavor. Any of the greens will do. This is one of those quick recipes that will have your family eating in 20-30 minutes. Can easily become a soup by adding a vegetable broth. Very versatile.

Chocolate Chip Oatmeal Muffins

When you have a love affair with food like I do it’s not unusual to gain a few unwanted pounds. Yep, I’m cutting back but that doesn’t mean I go without chocolate, or a sweet treat made with butter. You might already know oatmeal not only provides great nutritional value but suppresses your appetite. I’ve made so many delicious oatmeal recipes but was looking for something new for breakfast. (Yes, I eat oatmeal bars and cookies for breakfast.) Muffins are good and I came upon a recipe by Epicurious. I liked the butter and buttermilk ingredients, and knew this was going to be a rich tasting muffin. But I wanted chocolate! I made some changes and call this a version of the original recipe.
