Doesn’t this look fabulously delish! I wish I had some this very minute. A shy friend of mine made this for my mother. (See her food photo, next page. She advised me that noodles are really not part of this dish.) I say shy because she’d rather remain anonymous. And since she has yet another recipe for me, Filipino Adobo Style Chicken, I must respect her wishes.
Both recipes, the second coming up later today, are amazing and so healthy too.
This is a great dip to make when you’ve left over chicken. You can make it taste like Hot Wings or if you’re into Sriracha add this sweet tangy hot sauce instead. An easy Super Bowl appetizer that won’t have you running to the grocery store if you’re missing an ingredient … very forgiving and easy to substitute.
Rich and a little goes a long way!

I apologize. I wasn’t fast enough with the camera. We actually finished this off in one sitting it was so good.
Mentioned to my daughter about my creation, this Simple Green Enchilada Casserole, with only five ingredients and she said, “Oh yeah, I have that recipe!” You do! I didn’t know it was one!
So, while my daughter was setting up the family room for a little celebration I put this together in about 10 minutes and baked it through in 40. Serve with a Taco Salad. Perfect!
Did I mention I never grow tired of Italian! Any Italian recipe with pasta is my friend, especially with a splash of wine The wine either in the recipe or my glass I’m not picky. (Not sure my kids would agree with the not picky.)
This recipe takes about 30 minutes start to finish and presents well for company. I always lean toward Pinot Noir but a glass of Chardonnay is a compliment as well And Chianti Classico.

But this recipe is going to include chicken breasts. And, what I’ve done here. This is a 30 minute version of this hunter stew with little fuss.
Curious yet, about what I’ve used? Turkey! But not just turkey, lean ground Italian spiced turkey. I love turkey and sometimes find myself substituting it for chicken if I can. For me this works here but if you’re looking for something close to the actual dish … Not to worry.
The only thing we know for sure is this dish, further, any Tetrazzini dish, is named after Luisa Tetrazzini, an Italian opera star popular in the late 1800’s and early 1900’s. What seems to be in question is what hotel chef put this together for her and gave it her name. This is my own version of the dish. And it’s simmering.
Baking this a few minutes after the initial cooking gives a truly different twist to this pasta dish.
