The entree was a hit! George, the meat-n-potatoes birthday guy, loved it! There are many variations to this recipe.You might add your own touch like fresh peas, chopped celery, mashed cauliflower in place of potatoes but I like this just as it is. It absolutely has an amazing flavor and it’s so very moist.

If you like meat and potatoes I guarantee you’ll love this!

Hummingbird Cake

A request from my son-in-law. So, I looked through my cookbook library and pulled out one of my favorites, American Cake. (Thank you Ann, my daughter-in-law’s gift.) I enjoy reading the stories as much as looking over the recipes. After reviewing hummingbird cake recipes on-line this recipe looked best for my family. Oil instead of butter, no coconut (not liked by all), and the recipe was easy enough to toss together in record time.

My perfect dessert for Mother’s Day. Really simple but looks time involved, doesn’t it? The pastry comes together in 5-10 minutes, and while it bakes those 30 you can whip up the cream and cook (or not) the blueberries. Yes, some may prefer the blueberries uncooked and folded into the whipped cream. This is a rich yet light (heavenly) dessert. Add strawberries or mixed berries instead if you like.

Craving Red Velvet? Here’s a deliciously easy fix! My first recommendation is to use your very best unsweetened cocoa. I used Guittard Cocoa Rouge Cocoa Powder for its great taste and red cocoa color. It can be purchased at Amazon.com if you have difficulty finding it. Great for brownies too!

Coming Next!

Dinner isn’t complete without dessert! (in my opinion) Dessert can be as simple as fresh fruit, a special coffee, or digestif. But I have to admit I love cake and cookies, all with coffee, best. So, when I was watching Andie McDowell’s party for her new boyfriend in Love After Love I was focused on the red velvet cake at the end of the table. (The party went south pretty quickly. How many noticed the cake?) It looked deliciously homemade just like the result I had with Cook’s Illustrated’s Red Velvet Cake Recipe. Some times a cake is too much … so the reason for this cookie. Soon!

About the movie, Andie’s son (actor O’Dowd) was less than likable (3 out of 5 stars).

Couldn’t wait until it cooled to have a piece! Not recommended if you want to slice it perfectly. But it was perfectly delicious. A simple 50’s recipe … Use a traditional pie crust or use a Lemon Cookie Crust as I did here. The meringue might need an additional egg white or two if you’re into showy. I can help with that here.

If you can’t find Meyer lemons at your grocers the usual will do. We just had some Meyer lemons on hand.

Chiffon Upside Down Cake

From Mother’s recipe tin. A great little cake for a quick dessert fix. You probably have all the ingredients in your pantry. No pineapple? Then just add your favorite nuts to the top. I skipped the maraschino cherries you often see.

Amazing texture and moistness! Baked in an 8 inch cast iron pan, not recommended … the reason for the overflow edge around the cake. A 9-inch cast iron pan is recommended for the best results.
