Red Velvet Cookies

Craving Red Velvet? Here’s a deliciously easy fix! My first recommendation is to use your very best unsweetened cocoa. I used Guittard Cocoa Rouge Cocoa Powder for its great taste and red cocoa color. It can be purchased at Amazon.com if you have difficulty finding it. Great for brownies too!

Recipe

Preheat oven to 375 degrees F.

1/2 Cup butter-room temperature
1/2 Cup super fine sugar
1/2 Cup dark brown sugar-packed
2 Eggs
1 Teaspoon your best vanilla
2 Cups all purpose flour
2 Heaping tablespoons of unsweetened cocoa (Guittard Cocoa Rouge preferred)
1/2 Teaspoon baking soda
1/2 Teaspoon baking powder
1/2 Teaspoon salt
4 Heaping tablespoons of sour cream
1/2 Teaspoon red food coloring liquid

Cream butter with sugars in a large mixing bowl, medium mixer speed, until sugar begins to dissolve. Add one egg at a time to sugar/butter mixture and mix well after each.

Add vanilla and mix.

Measure dry ingredients in a medium bowl. Whisk thru these 5 ingredients well.

Slowly add the dry ingredients alternating with the sour cream into sugar/butter/egg/ vanilla mixture mixing on low then medium until just mixed through.

Stir in food coloring until mixed evenly.

Using a small ice cream scoop place scoops of dough on parchment paper covered cookie sheet. Allow two inches between scoops. Bake about 8 minutes or until top of cookie bounces back when touched. Makes 24-2 1/2 inch cookies.

Cool completely before frosting.

 

Frosting

1/4 Cup butter-room temperature
4 Ounces cream cheese-room temperature
2 Cups powdered sugar
1 Teaspoon vanilla
1/8 Teaspoon salt

Beat ingredients first on low to incorporate and then on high to produce a fluffy result. If frosting is too thick to spread add a little cream or sour cream, teaspoon at a time. If too thin to frost add a bit more powdered sugar.
