Nacho Soup
A great chili variation! But don’t take my word for it … Give it a try! This is a quick pantry recipe when you want something healthy & hearty but don’t have a lot of time to cook. If you’re a purest (cooking all the beans from scratch) it’s a tasty recipe worth the effort.
Linguica Lovers Only! Seriously! When my brother visits we have linguica … Linguica and Peas, Linguica and Eggs, Linguica and Greens, Linguica and Beans, Pizza with Linguica and just plain Linguica. My brother’s a purest and linguica alone is his favorite. I, on the other hand, put it in just about anything! Here’s an easy soup and the main ingredient … you’ve got the picture!
When we’re not making linguica we are buying some of our favorites locally, Raven’s of Armona and Lemoore Locker. But honestly, we love it all!
Cheesy Rice Soup! It’s still soup season and this one is sure to warm you. Not only that, but you already have the ingredients … well most! It’s an easy recipe with few ingredients. The secret is in the caramelizing of the onion. This will involve most of your prep time. The rest comes together quickly. Yep, I can’t deny this is a very rich soup but Oh So Good. A cup will do!
When you’ve a house full of hungry guests (and creating more meals than expected) … here’s a way to put together a quick soup they’ll love. If you just made Italian gravy so much the better but a jar sauce with a few other ingredients will do in a pinch. Some sauce ideas, here, if you need.

How can this be a Portuguese soup when it’s really a take on Dave Lieberman’s Moroccan recipe? Simple! Many spices and food influences came to Portugal from Northern Africa. To give this recipe more of a Portuguese flare use chicken broth, add an uncooked cubed potato (large) along with other ingredients, and cut back on the chickpeas by 15 ounces. Either way this is an amazingly hearty meatless main dish soup.

Rich creamy vegetarian soup for the cold winter meal. Spice it up with red pepper flakes for more warmth. Tame it down with broth instead of cream. Make the recipe your own or enjoy just this way. And for those that can’t go meatless add crumbled cooked Italian sausage.
