No Bacon Potato Soup

Why no bacon? No particular reason. Yep, you do see a little bacon garnish. This is a rich without butter or milk recipe. Oops, there’s sour cream and cheese. Just a different take on a classic soup. For another recipe equally as delicious, try here. The recipe you try might just come down to the ingredients you have on hand. If that’s the case and your cupboards are bare try this.

Recipe

32 Ounces chicken broth
5-6 Cups 3/4″ cubed uncooked peeled potatoes-russets, golden, or white
2 Bay leaves
1 Bunch green onions-rinsed and drained
10 Ounce can condensed cream of celery soup-not diluted (cream of chicken or cream of mushroom can be substituted)
1 Cup low fat sour cream
1 Cup shredded sharp cheddar
Cooked bacon for garnish
Salt and pepper to taste

In a medium sized dutch oven add the chicken broth and bring to a simmer over medium heat.

Add the potatoes, bay leaves, white portion of the green onions and simmer uncovered until the potatoes are tender but not falling apart. You may need to turn the heat down to avoid a boil. Some of the liquid will evaporate.

Remove the bay leaves and stir in the cream soup, sour cream and cheese. Heat through.

Taste for need of salt and pepper.

Serve with a garnish of cheese, green onion and bacon if desired.
