Just can’t say it enough and I’m a chocolate chip cookie aficionado. If you’re into chocolate chip cookies with a touch of oatmeal and like the chewy variety these are for you!

Recipe

Preheat oven to 375 degrees, careful if your oven runs on the hot side

1/2 Cup butter-room temperature but not melty soft
1/2 Cup of each, white sugar and dark brown sugar
1 Egg
1 Teaspoon best vanilla
1 Cup all purpose flour
1/2 Cup quick oats
1/2 Teaspoon salt
1/2 Teaspoon baking soda
1/2 Cup chopped nuts
1 Cup your favorite chocolate chips

Beat butter, sugars, egg and vanilla together until creamy.

After whisking together the dry ingredients add to creamy mixture. Stir at first. Then mix just until all is incorporated.

Next fold in the nuts and chocolate chips. Use a small ice cream scoop to assure equally sized cookies. These cookies will flatten during baking. Allow 3 inches between cookies.

Bake on parchment paper covered baking sheet. Always start with a cool baking sheet to avoid overly flat cookies. Bake until golden brown about 10 minutes. Not all ovens are equal. Keep an eye to avoid over baking.

Let cool.

Makes about 1 1/2 dozen 3 inch cookies.
