Chocolate Cola Cake

Recipe

Preheat oven to 350 degrees F.
Butter and lightly flour an oblong baking dish. Baking spray can be used instead.

Cake

2 Cups all purpose flour
2 Cups sugar
1 Teaspoon baking soda
1/2 Teaspoon ground cinnamon
1/4 Teaspoon salt
1 Cup butter
1 Cup cola
1/2 Cup buttermilk
1/4 Cup unsweetened cocoa
2 Large eggs
1 Teaspoon vanilla

Whisk together dry ingredients and set aside.

In a large saucepan add butter, cola, buttermilk and cocoa. Bring to a boil over medium heat stirring as you go to avoid scorching.

Remove from heat and stir in flour mixture until smooth.

Add eggs and vanilla. Careful about cooking eggs in the batter. Mix in eggs quickly. Mix in vanilla.

Pour into prepared baking dish and bake 30 minutes or until wooden toothpick pierced in cake comes out clean.

Remove from oven and let rest a minute or 2. Then pour over the frosting and spread. Ready to slice in about 30 minutes.

 

Frosting

1/2 Cup butter
1/2 Cup cola
1/4 Cup unsweetened cocoa
4 Cups powdered sugar
1 Cup chopped pecans

In a saucepan over medium heat bring to boil the first 3 ingredients stirring attentively.

Remove from heat and add powdered sugar and mix until smooth.

Add nuts.

Pour frosting carefully over cake not just concentrating in the middle. Smooth over cake.

Let cool for 30 minutes before slicing.
