Mexican Style Scrambled Eggs
Deliciously simple scrambled eggs. Quick and easy with minimal ingredients. No meat or cheese but lots of flavor.

Recipe
1 Tablespoon lard, or bacon drippings or cooking oil
1 Cup chopped yellow onion
2-3 Jalapeño or Serrano peppers-stem and seeds removed then chopped (or roasted and peeled & chopped poblano)
6 Large eggs
1 Cup chopped canned tomatoes-or fresh
Salt and pepper to taste
Garnish with cilantro optional
Sauté the onion and peppers in drippings using a skillet large enough for all ingredients over medium heat.
When al dente add the eggs that have been beaten fluffy with a tablespoon of water or milk. Stir constantly to produce soft scrambled eggs. OR break the eggs directly into the skillet if you prefer less tender cooked eggs-scramble as you go.
Fold in tomatoes just as the eggs finish cooking. Add salt and pepper. Heat through.
Ready to serve.
