Portuguese Style Pot Roast

& Roasted Turnips

In time for Sunday Dinner. Delicious tasting roast with the minimum of prep. Instead of potatoes I’ve added turnips. Because turnips tend to cook up easily in moisture I prefer to roast them separately to get the full caramelized taste. All is then layered into a serving dish and the warm juices are poured over the top.

Recipe

Preheat oven to 350 degrees F.

2-3 Pound boneless chuck roast
Cooking oil
2-3 Large cloves of garlic-garlic pressed
Salt and pepper
10 Ounces of linguica
2 Slices of thick bacon
2 Tablespoons of butter
1 Cup of dry read wine

In a dutch oven just large enough for the ingredients brown the beef over medium-high heat. If the meat is fatty enough and your pan is seasoned well there is no need to add  cooking oil. Just remember in the browning process the meat will stick initially and then loosen. Brown both sides of the roast well. If this is done in your roasting pan the juices that develop in cooking will have deepened flavor.

Salt and pepper both sides of the roast as you go.

Spread pressed garlic over the surface of the meat, top and bottom.

Add the cup of wine around the meat.

Cut the linguica in long lengths and tuck around the meat.

Layer the bacon over the roast and add pats of the butter over all. Cover with lid.

Place into preheated oven and roast for 2 to 2 1/2 hours.

Remove from oven and allow to rest loosely covered for 15-20 minutes. This is a great time to roast the turnips.

Remove meat to a serving dish tucking the roasted turnips around as well as the linguica.

Place the dripping into a fat separator. Pour drippings over all.

Roasted Turnips

Preheat oven to 425 degrees F.

4 Turnips or 1 per person
2 Tablespoons olive oil
Salt and pepper
3 Cloves of garlic-peeled and sliced

Cut peeled turnips into quarters.

Toss turnips in olive oil and place into roasting pan single layered.

Salt and pepper over all.

Add slices of garlic.

Place into oven and roast 40 minutes or until turnips have a nice golden brown touch and are fork tender.
