Apple Season RecipesIt’s Apple Season! Some of my favorite Apple Recipes for you to try. Make your own applesauce for the baked recipes with this ingredient. So easy. Just peel, core and roughly chop cooking apples. Place into your medium saucepan with a bit of water-just enough water to barely cover the bottom. Simmer until apples are applesauce consistently. Add a pinch of salt if you wish. No sugar needed. Perfect! Enjoy!

When Gayle mentioned she was going to have Bangers and Mash I knew she wasn’t planning a trip to Bakersfield … My only Irish Pub experience (not exactly true, Boston too). I found myself yearning for the experience without the travel. So, at 930 this morning I had Bangers and Mash for breakfast. The truth is once a week, Wednesdays, I do a thorough pantry and refrigerator/freezer check for outdated items. My potatoes were stored too close to light and were beginning to sprout. The onions were showing a little stress and I clearly needed to cook the sausage soon. Gayle’s comment was the spark! Enjoy this easy fix meal with pantry items we all have … In no time.

Family Vacation!

VacationWhat a son-in-law and daughter! Making me part of their yearly Hawaiian Island vacation! And I can’t thank them enough. The resort was fabulous … The food never-ending … The sites breathtaking. All this and with my daughter’s little family. It was perfect.

No Bake Pumpkin Pie and Italian Meringue

Every holiday it’s quite a challenge to bake three pies, a turkey and roast vegetables all in the same oven … And well, time it to optimum freshness. It has taken me many years to get this down … And yes, some holidays I just miss disastrous results.

These no bake pies are a great idea anytime. For the holidays they are a nice surprise for the one or two guests who would prefer something other than the traditional pie. Or if you are trying to lighten up the baking serve this as the main dessert. It’s amazing!

You’ll be able to put this pie together a week or weeks before, with the exception of the topping, and hold it in the freezer until ready to serve.

Popcorn Balls

popcorn ballsHere’s a really simple recipe I’ve used for many years. I like to add M & M’s but there is definitely a trick in adding these to the popcorn balls. And I had forgotten until I made these today. You can add other candies like licorice bits, gum drops (both easier to handle), or nuts. Almonds are good.

Eating habits have changed over the years. And so have many old recipes. We are more conscious of the nutritional value of what we eat. We scrutinize  ingredients. We change up recipes adding good ingredients and eliminating the bad. One of the ingredients we now change out is vegetable shortening, substituting vegetable cooking oil or butter. Vegetable shortening has had a facelift, too, however. Crisco, for one, changed their almost 100 year old formula to remain in the competition. Trans fats have been eliminated. But still we gravitate to the oil and butter. What really competes well with the taste of butter!

Old cake recipes most often use shortening as the fat ingredient. Substituting oil or butter for the shortening can be tricky. The texture of the cake changes and often times not for the better. There are just some cake recipe ingredients better left alone. This Peanut Butter Cake’s ingredients are from the 1950 edition of Betty Crocker’s Picture Cook Book with slight variation. I’ve just simply made this a quick one bowl mix.
