Easy Salmon Dinner

Treasures from the sea were never found on my plate when I was growing up. Well, unless it came from a tuna can. Except for my Grandmother Rose our family was just not into what the ocean had to offer with the exception of crab for my dad and brother. Even grandma repeating fish is brain food didn’t change the menu. Today, there is nothing welcomed like a nicely prepared ocean fish.

This recipe is revised from one printed in the July 2001 Bon Appetit Magazine. It has an impressive presentation whether you are cooking for a crowd or for one.

Thank you Dora for suggesting this recipe so many years ago for me to prepare for Marc, and for taking the recipe from the barbecue to the oven. Marc did enjoy salmon cooked this way. Or was it Ed? 

Dora and I worked together for years in research. We disagreed more than agreed except about food. Remembering our high tea in Phoenix. Or was that Pasadena?

Well, how ’bout butterscotch or peanut butter, espresso or caramel or any baking chip flavor you like … cinnamon, chocolate mint, lemon, white chocolate. This ‘no recipe’ works for almost any baking chips. It will not work well with chips that do not melt easily.

What a simple lasagna dish with an amazing taste! Dress it up or down. It’s up to you. This one is vegetarian and so deliciously simple. Make your own sauce or use the best jar sauce you can find. Needn’t feel guilty about jar sauce … even chefs use it! This is one of those 30 minute meals too. We loved it!

Persimmon Holiday Pudding

Going through Mother’s recipe stash I found this simple Persimmon Pudding recipe written up by her friend Dorothy Hoffman. These two gals (now gone) knew each other since the 40’s. Dorothy was a good cook and Mother only kept recipes she thought delicious … usually making notes on the recipe card about the outcome. No notes this time but decided it must have been a keeper. Yep!!

Quick word about Persimmon pudding. It’s not a pudding at all just as a figgy pudding isn’t. The texture is of a very moist nutty cake. The prep is quick and the baking is longer than the usual. This gives you time to prepare a hard sauce. Serve this with hard sauce or chantilly cream. I like both (of course). Dorothy’s hard sauce recipe is very quick and tastes heavily of brown sugar. I love the taste but you may wish to try another version of hard sauce here.

And before Julia Child there was Fannie Farmer. My Mother in her later years acquired a Fannie Farmer Cookbook, a cookbook that was first published in 1896. Mother came from old school and followed recipes to the letter. She loved the simplicity of this cookbook. And no one was complaining about the delicious results. After Mother’s death I acquired her small collection of cookbooks. The one I cherished had long disappeared, a gift to my Mother from my Dad at their first Christmas. As my Mother tells it, she cried and cried when she opened the gift. At the age of 10 as she told the story I wasn’t sure … did she love it or hate it. For many years this Good Housekeeping Cookbook was her go-to.

This Onion Soup recipe is influenced by Fannie Farmer’s 6 ingredient recipe. No beef stock or broth. Has an amazing depth in flavor.

Coconut Pound CakeYou gotta love coconut! Here’s a great dessert for that Spring gathering. Don’t tell anyone but I love this with my morning coffee. Works perfectly for brunch. This is not a family recipe but one I found, in a Country Door catalogue, … not that I didn’t tweak it a bit. Shopping on line is a must and what this means … I receive every imaginable catalogue out there, no matter what! The home decorating catalogues give me good ideas without me spending a dime. Yes, I move my home furnishings around a lot. Ha! And yep, they often have recipes sprinkled in. As for clothing catalogues … I’d rather rely on my daughter instead, Sapphire Diaries. Now for that recipe.
